Believe it or not, Cream of Wheat can look like this, decadent, mocha pudding. Cream of wheat has always been one of my favorite breakfast options. I love hot cereal so when they presented it to me as a gourmet cooking option I was in awe!!!
Cream of Wheat Goes Gourmet
Warm Creamy Mocha Pudding by Sara Moulton
2 cups whole milk
a hefty pinch of salt
1/3 cup cream of wheat
1 ounce unsweetened chocolate, finely chopped
½ cup chocolate chips or 2 ½ ounces finely chopped bittersweet chocolate
2 tablespoons sugar
2 teaspoons instant espresso powder (such as Medaglio d’Oro)
½ teaspoon vanilla
Bring the milk and the salt just up to a boil in a small saucepan.
Add the cream of wheat in a stream, whisking, and simmer for 2 1/1 minutes, whisking often.
Take the saucepan off the burner, add the chocolates, espresso powder and sugar and let stand for 1 minute.
Stir until the chocolate is incorporated and the mixture is smooth.
Whisk in the vanilla and serve right away.
