
Did you know that September 29th is National Coffee Day? Now that is my kind of holiday! To help you get ready to celebrate, Coco Joy are sharing this delicious recipe for ice cream with a coffee twist:
Vanilla Coffee Ice Cream

Ingredients:
1 bottle of refrigerated Coco Joy Coffee Flavored Coconut Milk
1/3 cup honey
1 vanilla bean stick (grated)
1 teaspoon of nutmeg (or spice of your choice)
Directions:
Place bottle of coconut milk in refrigerator for at least 12 hours (preferably 24 hours)
After Coconut Milk is chilled, pour entire contents of bottle in a bowl
Add in honey, nutmeg, and grated vanilla bean
Whip high for 3-4 minutes
Transfer to ice cream tin
Cover with plastic wrap
Freeze for 45 minutes
