Summer is MIA this week with a cold and I was in the mood to make cookies. I’m terrible at baking a simple chocolate chip cookie recipe. I have major issues with using butter and making the perfect batch of cookies. They are either too flat, took cake like or too crispy, never perfect. Earlier this week, I really wanted to make a batch of chocolate chip cookies but didn’t want to throw all of the ingredients together just to be disappointed again with how my cookies turned out. So, I looked on-line for a Cake Mix Cookie recipe. I found quite a few variations and decided to try a Yellow Cake Mix Cookie Recipe.
Ingredients:
1 box of Betty Crocker Yellow Cake Mix (because she makes the best cake mix)
2 eggs
1/3 cup vegetable oil (applesauce of you want to use something healthier)
2 cups chocolate chips
Directions:
Preheat the oven to 350 degrees
Mix the cake mix, eggs, and oil, then gradually add the chocolate chips
Spoon onto cookie tray and cook in the oven for 8 to 10 minutes.
Cool on wire rack. Eat quickly because I was told they dry out quickly, wouldn’t know for sure because ours didn’t last more than a few hours.
These cookies are delicious. My husband and I have quite an addiction to the flavor of yellow cake mix. I was supposed to pick up more yellow cake mix at the grocery store because we’re out of cookies already. I guess I’ll be getting more cake mix next week. This recipe can be changed with any flavor of cake mix.

I actually have that yellow cake mix here but I didn’t know that it can also be used for a cookie recipe. Thanks for sharing this one.
These are great for mailing overseas to our military. It took my box 3 weeks and my son said “They were like fresh out of the oven!”
My recipe calls for the 18 oz cake mix, 1/2 cup oil and 2 eggs.
Variation: French Vanilla with orange extract to taste, a bit of food coloring to enhance the experience (face it, the ‘Sandbox’ isn’t all that colorful!) and reconstituted dried cranberries. A HUGE hit with him and the guys on board the ship!
Strawberry cake mix rolled into balls, then kinda flattened so you can put ONE mini strawberry from a jar of strawberry preserves and fold dough around it again, placed in muffin papers and lightly pressed…those were also favorites with the boys. That one strawberry made them feel like they were eating something healthy while enjoying a treat (that’s what I was told).
Chocolate actually turned out dry. But the 2 above were moist even after 3 weeks. seal well in ziplocks.

made the cookies tonight with the French Vanilla cake mix and liked the idea that someone posted earlier of adding orange flavoring so I added some Penzey’s orange peel and their orange extract as well as choc chips – too delicious for words! Oh, and I used applesauce vs. oil

Great simple recipe.
But I’d highly recommend you use applesauce instead of oil. 1/3 cup of applesauce has 35 calories and 1/3 cup oil has 642. Plus there is some good evidence that canola oil is really bad for you.
