Funfetti Stuffed Cotton Candy Cookies Recipe @Smuckers #HolidayTips

While I was at Smuckers (they paid for travel and accommodations and gave me samples), I picked out some Purple Funfetti icing to use at home and I decided to make these Cotton Candy Cookies. It’s a semi-homemade candy creation, or rather, I put two different kinds of store bought items together creating this fun fantastic creation.

In this recipe I used a Cotton Candy Cookie Mix. My suggestion to make it home made would be to create a sugar cookie batch and when it’s ready to go into the oven gently mix in cotton candy until well mixed.

Funfetti Stuffed Cotton Candy Cookie Recipe

Ingredients:

1 bag of Cotton Candy Cookie Mix
1 egg (beaten)
1/2 stick (1/2 cup) butter Crisco
1 container of Pillsbury Funfetti Icing

Directions:

Mix the cookie mix, egg, and butter together according to the directions on the package

Cook the cookies for about 8 minutes in the oven at 375 degrees F.

Then spoon the icing on the bottom of one cookie then place the bottom of another cookie on top of the icing and sprinkle the sides of the cookie with the Funfetti sprinkles.

Care to Go Bold With Pillsbury’s #GoBold Funfetti Challenge

We are working with Pillsbury and our opinions are our own.

Using the new brightly colored Bold colors of Pillsbury’s Funfetti cupcake mixes and icings we made quite a few bold statements in our house. I made some cupcakes first, they were really large cupcakes and the batter only made five. I forgot about them in the oven so they burned a little bit and when they burn they lose their bright colors so what I decided to do was cute shapes into the cupcakes. I found my butterfly and ice cream cone cookie cutters and cut some really fun shapes after first slicing the cupcake into three horizontally making them thin like cookies.

The kids at them up like nothing flat. And I can’t wait to use one of the other varieties and see how bright the orange and yellow Funfetti mixes come out. Here are all the varieties we received for review:

For a little variety I put a few in a straw so we could have fun shapes on a stick. They say everything is better served on a stick. So here are three tips to go bold and different in a quick and easy way.

Spring Time Jam into Thumbprint Cookies Recipe

It’s spring and the fruits are in season. While I was at Costco yesterday it was so hard to pass up the crate of strawberries. The only reason why I did was because we get a weekly box of produce sent to our house and I can’t wait to see what’s in it. With fruit being in season it’s really easy to make your own low sugar Jam with Truvia use this Balsamic Strawberry jam recipe and substitute the sugar for Truvia low calorie sweetener by cutting the amount in half 2 cups sugar = 1 cup truvia, or you can always use jam from the store.

While I was with Smuckers last November we made these Thumbprint cookies. JUST DELISH!

Classic Thumbprint Cookies

Makes: 4 Dozen

Preparation Time: 40 Minutes

Cooking Time: 17 Minutes

Ingredients

· Crisco® Original No-Stick Cooking Spray
· 1/2 cup firmly packed brown sugar
· 1 Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening, cut into slices
· OR 1 cup Crisco® Butter Flavor All-Vegetable Shortening
· 3 large eggs, separated
· 2 tablespoons water
· 1 1/2 teaspoons vanilla extract
· 1/4 teaspoon salt
· 2 cups Pillsbury BEST® All Purpose Flour
· 2 cups finely chopped pecans
· 1 cup Smucker’s® Strawberry Preserves, or any Smucker’s® Preserves, Jam or Jelly

Directions

1. HEAT oven to 350°F. Adjust rack to middle position. Coat two cookie sheets lightly with no-stick cooking spray.

2. BEAT brown sugar and shortening in medium bowl with an electric mixer at medium speed for 2 minutes or until fluffy. Scrape down sides of bowl. Add egg yolks, water, vanilla and salt. Beat until well combined. Add flour on low speed until well blended.

3. BEAT egg whites in a shallow bowl until foamy. Place pecans in a separate shallow bowl. Measure about 2 teaspoons dough for each cookie. Roll into balls. Dip each dough ball into egg whites, then roll into pecans. Place on prepared cookie sheet. Using the back of a teaspoon or your thumb, make a rounded indentation in the top of each cookie.

4. BAKE 10 minutes. Remove from oven. It may be necessary to create the indentation once again with a spoon. Place about 1 teaspoon preserves into the indentation of each cookie.

Sweet & Spicy Strawberry Shard Veggies Recipe

The sweet in this recipe comes from the Smucker’s Natural Strawberry Jelly. I visited Smucker’s last year and since then they send me new products to try and the Natural Strawberry Jelly is one of those products. I liked it so much that I went over to Albertsons and purchased the other flavors they have in the Natural Jelly line. I purchased grape and raspberry. The spicy comes from the added spices! YUM!

Sweet & Spicy Shard Veggies

Sweet & Spicy Strawberry Shard Veggies Recipe

Ingredients:

1 bunch of broccoli
1 bunch of red chard (separate the leaves and the stalks)
2 sticks of celery
1 cup of mushrooms
1 tsp. cayenne pepper
1 tsp. chili pepper
1 tsp. chipotle pepper
1 tsp. salt
2 Tablespoons extra virgin olive oil
2 garlic cloves (Minced)
1/4 cup of chicken stock

(I don’t use onions in my house but I bet some onions would also add to the flavor of this dish)
Smucker’s Natural Strawberry Jelly

Directions:

Chop the celery, broccoli, and shard

In a large skillet heat up the oil and garlic (over medium heat)

Throw the veggies in your pan get the veggies browned with the oil and garlic, then add your other seasonings

Add 1/4 cup of chicken stock and cover with a lid (turning the heat down to medium low)

Let them steam for about 5 to 10 minutes depending on how crunchy you like your veggies

Then serve with a tablespoon or two of the Strawberry Jelly!

Something we do every year is make cookies or a ginger bread house for Christmas. It’s a tradition that the kids love to do with their aunt that comes to our house for Christmas. This year, Zoe and her made gingerbread cookies and used lots of icing and sprinkles and marshmallows and all kinds of goodies to make great cookies. Zoe had so much fun and went crazy with the sprinkles on some of the cookies. I did catch this photo, the Pillsbury® Funfetti icing works great as a glue for marshmallows and then they include sprinkles and snowflakes which you can see on the Christmas Tree.

I love baking, and since I had 8 people in my house I need to make sure I had a lot of cookies in the house. I made Mint Fudge Bites mostly for me because I love chocolate and fudge and mint, it’s a great combination. I adore cookies and have a very hard time stopping with just one. These, yeah, I ate almost all of them before our guests even showed up. They were very easy to make and I’ll share the recipe with you very soon.

And Zoe’s birthday was last week and she gets to take a treat into class. We talked quite a bit about what we were going to make. We decided to make cupcakes and she did the baking. She put in all the ingredients and mixed them up with a spatula. She made the Dark Chocolate Mint Chip Cupcakes.

Mocha Cappuccino Hazelnut Chocolate Chip Cookies

Ingredients

· 1/2 cup Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
· 1/2 cup Jif® Mocha Cappuccino Hazelnut Spread
· 1/2 cup firmly packed brown sugar
· 1/2 cup sugar
· 1 large egg
· 2 tablespoons milk
· 1 teaspoon vanilla extract
· 1 cup All Purpose Flour
  3/4 cup Quaker Oats 
· 1 teaspoon baking soda
· 1/2 teaspoon salt
· 1 12 Ounce bag of large Dark Chocolate Chips

Directions

1. HEAT oven to 375°F.

2. BEAT shortening, Mocha Cappuccino Hazelnut Spread, brown sugar and sugar in large bowl with electric mixer on high speed. Beat in egg, milk and vanilla. Add flour and Quaker Oats, baking soda and salt. Beat on low speed until stiff dough forms. Gently mix in the chocolate chips Shape into 1-inch balls. Place 2 inches apart on baking sheet.

3. BAKE 10 to 12 minutes or until golden brown. Cool on pan 3 minutes. Remove to wire rack to cool completely.

Then of course you should enjoy!

How To Etch Glass: Great Holiday Gift Idea Step By Step @Smuckers #holidaytips

While I was in Orville with Smuckers (they provided transportation and accommodations) I learned just how easy it is to etch glass. You get a jar, you clean it, decorate it, put gel on it, then wash it off and wow. you have a masterpiece.

Smuckers brought about 15 bloggers in to teach us some really great holiday tips, from recipes to decorating and I’m so excited to share them with you guys. So this is how I made an etched glass cookie jar for our family.

Supplies needed:

Glass item
Rubbing alcohol
Vinyl stencil, stickers,
Painters tape
Utility knife, razor blade
Etching cream
Latex or vinyl gloves
Hand held squeegee
Foam painting brush
Dish soap or just Hot Water
Rags or paper towel

Directions:

Clean all surfaces of the glass with rubbing alcohol.

Create your decorations or get an idea of what you want your jar to say or look like. I think sticker work best. See how I used the stickers to say Zoe and Miles Treats.

Then decide on what shape you want. I wanted a heart, so you put tape on a brown paper bag or something. Draw out the shape, circle, oval, square or heart. Then cut it out. Then peal off the painters tape and put the tape on the jar creating the shape.

Put on the gloves, do not let children to this part. After that you will put a very thick coat of the etching gel with the sponge brush on the jar. Let the gel stay on the jar for 5 minutes then you wash it off with hot water. You might need a little soap but hot water should be enough. Be sure to read the directions on the particular etching gel you are using.

And then you have your jar ready for using, and it takes great photos.

Peanut Chicken Mini Phyllo Cups Recipe From @Smuckers #HolidayTips

I recently went on a trip to Orville Ohio where I met with Smuckers, a family oriented company that taught me lot of new recipes to try this holiday season. One of them that I actually cooked in their test kitchen was this Peanut Chicken Mini Phyllo Cups Recipe. I had a lot of fun cooking in their kitchen and will be making this recipe for my family. And this photo is my actual photo. My partner and I made these and plated them for this photo. Nummy right?

Peanut Chicken Mini Phyllo Cups

Makes: 45 Cups
Preparation Time: 10 Minutes
Cooking Time: 15 Minutes

Ingredients

1 tbsp. Crisco® Pure Olive Oil
1 lb. ground chicken
1/4 cup diced red bell pepper
2 tbsps chopped green onion
1/4 cup Jif® Creamy Peanut Butter
1/4 cup water
2 tbsps soy sauce
1 tsp. minced garlic (we put in two cloves)
1 tsp. finely grated gingerroot
1/8 tsp. pepper
2 tbsps fresh lime juice
3 (15-count) pkgs. frozen pre-baked mini phyllo shells, thawed
2 tbsps chopped fresh cilantro

Directions

1. HEAT oil in large skillet over medium heat. Add chicken; cook until crumbly and no longer pink. Add red pepper and onion. Cook 1 minute.IMG_8615

2. COMBINE peanut butter, water, soy sauce, garlic, ginger and pepper in small saucepan. Cook over low heat, stirring until smooth. Stir in lime juice.IMG_8616

3. POUR sauce over cooked chicken, stirring until thoroughly combined. Fill each phyllo shell with 1 tablespoon chicken mixture. Garnish with cilantro.

Working with the Peanut Chicken Mini Phyllo Cups Recipe at Smuckers was so much fun. I loved learning about all their brands, Jiff, Folgers, Dunkin Donuts, and so many more and I can’t wait to continue sharing with you different holiday tips and recipes that I learned from the trip.
