BBQ Mexican Caesar Salad with Fire Roasted Green Chile Dressing Recipe #HormelFamily

I’m a Hormel Family Ambassador and receive samples for my participation.

I love Mexican food, it’s my all time favorite. Sometimes Mexican food isn’t that healthy because it’s covered in cheese and lots of really tasty but unhealthy in large proportions. This recipe seems more on the healthy side and still contains that Mexican flair.

BBQ Mexican Caesar Salad with Fire Roasted Green Chile Dressing Recipe

Ingredients:

  • 1 (4-ounce) can LA VICTORIA® Fire Roasted Diced Green Chiles
  • 2 whole garlic cloves
  • 2 tbsp fresh lemon juice
  • 1/2 tsp Dijon mustard
  • 1/4 cup fresh cilantro leaves
  • 1 cup mayonnaise
  • 1/4 cup water
  • 3 tbsp grated Parmesan cheese
  • Salt and freshly ground pepper
  • 2 burrito-size LA VICTORIA® Flour Tortillas
  • Vegetable oil
  • 3 heads romaine lettuce hearts
  • 2 tbsp olive oil
  • 1/2 cup pepitas (roasted pumpkin seeds)
  • 1/2 cup Cotija cheese, crumbled
    Directions:
  1. Heat grill to medium heat.
  2. Make the Roasted Green Chile Dressing by using a food processor to combine LA VICTORIA® Fire Roasted Diced Green Chiles, garlic, lemon juice, Dijon mustard and cilantro leaves.
  3. Blend until smooth. Add mayonnaise, water and Parmesan cheese and blend well. If necessary, add more water to create thick but pourable consistency.
  4. Season with salt and pepper and refrigerate until ready to use.
  5. Cut tortillas into matchstick-size strips. Heat 1-inch of vegetable oil in sauté pan and fry tortilla strips until crisp.
  6. Remove fried tortilla strips with slotted spoon and drain on paper towels. Set aside.
  7. Cut each romaine heart in half lengthwise and drizzle or brush each half with 1 teaspoon of olive oil; season with salt and pepper.
  8. Place romaine cut side down on grill 1 minute or until grill marks begin to appear.
  9. Remove romaine hearts from grill and place each on plate.
  10. Drizzle with Roasted Green Chile Dressing and top with fried tortilla strips, sprinkling of pepitas and crumbled Cotija cheese.

Johnsonville Hot & Spicy Mexican Tortilla Casserole Recipe

According to Johnsonville, hot flavors are on the rise across America.  To meet the emerging needs of consumers, Johnsonville is introducing a Hot & Spicy Breakfast Link. Made with Premium Cuts of Pork and the perfect blend of spices, new Gluten-Free Hot ‘n Spicy breakfast sausages are a great addition to any breakfast and can be made into any meal. Here is a recipe they created to try the new sausage in.

Mexican Tortilla Casserole Recipe

Ingredients:

  • 2 packages (12 ounces each) JOHNSONVILLE® Hot & Spicy Breakfast Sausage Links
  • 1 cup chopped onion
  • ½ cup chopped red bell pepper
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 2 teaspoons chili powder
  • 2 cans (4 ounces each) diced mild green chilies
  • 2 cups (8 ounces) shredded cheddar cheese
  • 1 cup (4 ounces) shredded pepper jack cheese
  • ½ cup chopped green onion
  • ¼ cup chopped fresh cilantro
  • 4 cups coarsely crushed tortilla chips, divided
  • 10 eggs
  • 2-1/2 cups milk
  • ½ teaspoon salt
  • ¼ teaspoon hot pepper sauce

Directions:

1. Preheat oven to 350°F.

2. Cook sausage according to package directions; cut into small pieces and set aside.

3. In a skillet, sauté onion and bell pepper in oil until almost tender. Stir in garlic and chili powder; cook 1 minute longer. Stir in the sausage and chilies; set aside.

4. In a bowl, combine the cheddar cheese, pepper jack cheese, green onion and cilantro.

5. Arrange half of the tortilla chips over the bottom of a greased 13-in. x 9-in. baking dish.

6. Layer with half of the sausage mixture and half of the cheese mixture; repeat layers.

7. In a bowl, whisk the eggs, milk, salt and hot pepper sauce; pour over casserole. Sprinkle with the remaining tortilla chips.

8. Bake, uncovered, for 45-50 minutes or until a knife inserted in the center comes out clean.
