Garlic Shrimp with Blistered Tomatoes and Linguine Recipe from @eMeals! Helps you #GetHealthy – AND eMeals #Discount Code for 15% Off

As a part of the eMeals Blogger Program, I get a subscription and sneak peeks at some of their campaigns. They also provide me with some great recipes to share with you. When I heard about their new “Get Healthy” campaign I could not wait to bring it to MomStart.

In honor of the Get Healthy campaign, I want to share this Garlic Shrimp with Blistered Tomatoes and Linguine recipe from their Low Cal plan with you. I haven’t tried it yet, but I LOVE seafood and can’t wait to bring this to my family’s dinner table.

Low Calorie Dinner Recipe: Garlic Shrimp with Blistered Tomatoes and Linguine

Ingredients

  • 12 oz uncooked whole grain linguine
  • 2 pints cherry or grape tomatoes
  • 2 tablespoons olive oil, divided
  • ½ teaspoon salt, divided
  • ½ teaspoon crushed red pepper
  • 2 tablespoons butter
  • 2 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 cup crumbled feta cheese

Instructions

  1. Preheat broiler.
  2. Cook pasta according to package directions.
  3. Meanwhile, toss tomatoes with 1 tablespoon oil, ¼ teaspoon salt and red pepper on a rimmed baking sheet.
  4. Broil 4 to 5 minutes or until tomatoes burst.
  5. Melt butter in a large skillet with remaining 1 tablespoon oil.
  6. Sprinkle shrimp with ¼ teaspoon salt; saute shrimp and garlic 2 to 3 minutes or until shrimp turn pink.
  7. Toss shrimp with tomato mixture.
  8. Divide pasta evenly among 6 shallow bowls.
  9. Top with shrimp and tomato mixture.
  10. Sprinkle each serving with cheese.

Grilled Bruschetta Recipe

Serves 16

Ingredients

· 1 ½ pounds tomatoes, peeled, seeded, and chopped
· 1 garlic clove, minced
· 2 tablespoons olive oil, divided
· 1 teaspoon balsamic vinegar
· ¼ cup fresh basil chiffonade*
· Salt and black pepper to taste
· 1 (1 lb) loaf French bread, cut into ½-inch-thick slices

Directions:

1. Combine tomatoes, garlic, 1 tablespoon oil, vinegar, basil, salt, and pepper in a medium bowl.

2. Cover and chill at least 1 hour.

3. Brush bread slices and grill rack with 1 tablespoon oil.

4. Grill bread over medium heat 2 minutes on each side, or until browned.

5. Top with tomato mixture and serve immediately.

6. *Chiffonade is a cutting technique often used for basil, mint, and greens. To cut a chiffonade, stack leaves of basil neatly, and roll tightly lengthwise. Use a very sharp knife to create thin slices.

Thomas Bagel Thins Anyone? and my Meal Plan Monday

IMG_5289 Today for lunch I had a Thomas’ Bagel Thins sandwich. The Thomas brand made some new bagels and my husband bought a Costco size package of them a month or so ago. I was surprised because we don’t usually try things from Costco, we try them in a small package and then move onto Costco. Well, These are addictively delicious. They have so much flavor and are thin. So it’s not like eating a bagel with a ton of chewing. I toasted mine, put some honey mustard on it, added turkey and havarti cheese and it was good. Zoe liked the smell of it so much she asked for it for dinner, which is why this will also be the beginning of my meal plan this week.

Each bagel is soft and delicious. The Bagel Thin is just the right size, containing 110 calories each.  They’re available in 100% Whole Wheat, Cinnamon Raisin, Everything and Plain and can now be purchased at supermarkets, Walmart and Target stores nationwide.
