FamilyFun Marshmallow GingerKids Recipe

Here’s another very easy recipe to make from , FamilyFun Magazine (familyfunmag.com) , no baking involved, just melt some chocolate.

Marshmallow GingerKids Recipe

Ingredients:

Large Marshmallows
Mini Marshmallows
1/2 cup sugar
2 teaspoons cinnamon
1/2 teaspoons ginger
1 cup white chocolate chips

Directions:

Combine 1/2 cup sugar with 2 teaspoons cinnamon and 1/2 teaspoons ginger in a medium bowl and set it aside.

Fill another medium bowl with water. Melt 1 cup white chocolate chips according to the package directions, then transfer the chocolate to a ziplock bag and snip off a corner.

To form each pop, slide two marshmallows onto a lollipop stick. Use the melted chocolate to adhere mini marshmallow arms and legs as shown. Let the chocolate set.

Dip the pop in the water, then roll it in the sugar mixture until coated.

Pipe on a chocolate face, then use more chocolate to attach heart and confetti sprinkle buttons, bows, and bow ties.

Mischievous Sampler Marshmallow and Rice Confections by Marshmallow Mischief

My love affair with rice crispy started only two years ago when one of my neighbors surprised me with some of her rice marshmallow goodies. Growing up in Hungary, we had no such product as marshmallows in a bag, it was only an ingredient in special candies or confections. So it is no surprise that I got my first bag only after I had children and we went on our first camping trip (shame on me). Anyhow, I still can’t eat them right out of the bag …. Like seasoned Marshmallow eaters have been doing it since childhood, but I absolutely adore it in a rice crispy form. The Mischievous Sampler of Marshmallow and Rice Confections is exactly what it sounds …. Mischievous.

imageThese round, one bite size goodies are so tasty and the sampler is just the right way of getting a special bit of different goodness in each bite. Creator, Sarah Figueroa Berchild put a little bit of extra something in each piece, inspired by cultures, different countries and unique flavors. The 9 piece sampler included the following flavors: Tall, Dark and Crispy (oh, goodie … one of my favorite); Lava Aloha (coconut and dark cacao); Italian Kiss (hazelnut + milk chocolate); The Big Kapuna (macadamia nut +white chocolate); Gingerlicious (cinnamon and candied ginger); Peace. Love and Peanut Butter (peanut butter and cinnamon); One, Two, Chai, Chai, Chai (masala spice black tea); and Plain Jane (vanilla). I absolutely love the Plain Jane, it was by far my favorite.

Now, if you like Rice Krispies, you will go crazy when you open this box …. Oh so many choices and so many ways of tickling your taste buds. They are all natural, gluten-free, made with brown rice and without gelatin. While I thought that my little boy with food allergies will devour these goodies, he was disinterested. But my two older ones did their fair share and thought that one box was not enough.

Chocolate Marshmallow Muffins Recipe

This recipe is actually a baking fail in my opinion. I found this recipe in the Entenmann’s Big Book of Baking recipe book and thought let’s give it a go. The first recipe we tried out of this book was an amazing recipe and well received by everyone. This one however, not so much. However, I’d love to know your opinion on it.

I used vanilla marshmallows

I mixed the dry ingredients together first

Chocolate Marshmallow Muffins Recipe:

Ingredients:

1 cup mini white marshmallows
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa
1 tablespoon baking powder
pinch salt
1/2 cup firmly packed brown sugar
1 cup whole milk
6 tablespoons vegetable oil

Directions:

Preheat the oven to 400 degrees
Grease a 12 cup muffin an or line with baking cups
Using scissors, cut the marshmallows in half (this is a trying exercise)
Lightly beat the eggs in a bowl, then beat in the milk and oil
Make a well in the center of the dry ingredients and pour in the beaten liquid ingredients>
Stir gently until just combined
DO NOT OVERMIX
Spoon the batter into muffin pan
Bake in the oven for 20 minutes
Let the muffins cool in the pan for 5 minutes then finish cooling on a wire rack
