Michael Angelo’s Frozen Family Style Meals

I am a bona fide workaholic. I have work weeks that can creep into the 60-70hr range, which doesn’t always leave me very much time to be a 50’s style good housewife and have dinner on the table promptly at 5pm. However, as old fashioned as it may sound, I want to have my cake and eat it too, by being a successful woman in the workforce and being able to be there for my family at the same time, dinner in hand.

If you are like me, one of your go to’s can be frozen family style meals. They are not always my favorite option, as I do enjoy the food preparation process and well let’s face it they are not always that tasty, full of all kinds of nonsense. Enter in Michael Angelo’s family and party sized meals in 46 or 80 ounces.

I must admit I had my reservations- for me frozen lasagna can pretty much contain anything, and the sauces can taste really ‘thick’ and ‘gel-like’- not at all resembling a tomato. We tried out the biggest one- 80 ounces, as Mack’s version of a portion size isn’t really the norm.

I was very pleased that I could read all the ingredients on the box-all natural ingredients, no preservatives, no fillers. The price point on it was comparable or better than the ‘leading’ frozen lasagnas so that was a plus before it even came out of the oven. Michael Angelo’s held up to their claims, the lasagna tasted very similar to restaurant take out. You could see the layers and chunks of tomato in the sauce, it actually looked like the photo on the box. It had the right amount of sauce-cheese-noodle-meat ratios, and the noodles were even al dente (something I have yet to have found in the other frozen lasagnas of mushiness). I think the 46oz size is perfect for families of 4, or 2 Mack portions if you are doing a conversion there. We had more than enough food with the 80oz size for dinner, and leftovers for the next few days. I would call that one more of a big family gathering size, maybe Sunday dinner –ish size.

Overall I would say this is a win- Michael Angelo’s family sized meals are a great solution to dinner for a family in a crunch, tastes not only like people food, but restaurant quality food, and is all natural and nutritious!

Lasagna Re-Made: 3 Surprising Lasagna Recipes to Make Tonight

Lasagna has been a staple in households for years – it’s relatively simple to make, everyone in the family loves it, and it’s a great dish that packages well as leftovers so you can freeze it and take it as your lunch when you’re craving a hearty meal.

And, there are so many variations to a basic lasagna recipe that you’re sure to please everyone in your family, whether they’re a meat lover, health nut, vegetarian, or anything in between. We love the dish so much that we’ve put together some variations that everyone is sure to love. But first, check out our must-know tips for making a lasagna dinner of your own:

  • Regardless of what type of lasagna you’re making, consider using no-boil noodles and assembling your dish 12 to 18 hours before you bake it. This will soften the noodles and make them even tastier when you serve the final dish.
  • If you opt for a meaty dish, try a combination of two or three different meats. Ground beef, hot Italian sausage, and sweet Italian sausage pair very well together for a flavor that’s just a little bit different. Sauté your meat with spices like oregano and garlic for an extra kick.
  • Instead of using just one type of cheese, create an Italian blend of provolone, Romano, mozzarella, and Parmesan.
  • If you’re making a tomato or cream-based sauce, be sure to put a layer of it on the bottom of the pan (before layering everything else) to avoid burning.
  • Adding vegetables like broccoli, mushrooms, or green and red peppers can enhance any lasagna dish. Frozen vegetables are an affordable (and easy) substitute if you don’t have a fresh supply on hand. Just make sure to thaw and drain them first!
  • A green salad makes a great addition to a lasagna dinner. Pair it with buttermilk dressing for a tasty meal.

Now, take a look at some of our favorite variations on lasagna recipes that are a great solution for an easy and affordable evening meal:

Vegetable Lasagna in Parmesan Cream Sauce

9 servings
3 Tbsp. butter or margarine
2 Tbsp. all-purpose flour
¼ tsp. salt
¼ tsp. ground red pepper (cayenne)
2 cups milk
½ cup parmesan cheese, grated
2 Tbsp. oil
3 cups chopped broccoli
1 cup shredded carrots
1 medium red bell pepper, chopped
½ cup chopped onion
3 cloves garlic, minced
2 cups ricotta cheese
1/3 cup fresh basil leaves, chopped
9 lasagna noodles, cooked, drained
3 cups shredded cheese (any 4-cheese blend works well), divided

Preheat oven to 375°F.

Melt butter in medium saucepan on low heat. Stir in flour, salt and ground red pepper; cook 2 min. or until bubbly, stirring frequently. Gradually add milk, stirring until well blended. Cook on medium heat until mixture boils and thickens, stirring constantly. Reduce heat to low; simmer 3 min. Stir in Parmesan cheese; set aside.
Heat
oil in large skillet on medium-high heat. Add broccoli, carrots, bell peppers, onions and garlic; cook and stir 4 to 5 min. or until crisp-tender; set aside. Mix ricotta cheese and basil.

Spoon 1/4 cup of the Parmesan sauce into 12×8-inch baking dish; cover with layers of 3 of the noodles, 1/2 of the ricotta cheese mixture, 1/3 of the vegetable mixture, 1 cup of the shredded cheese and 1/3 of the remaining Parmesan sauce. Repeat layers of noodles, ricotta cheese mixture, vegetable mixture, shredded cheese and Parmesan sauce. Top with remaining 3 noodles, remaining Parmesan sauce, remaining vegetable mixture and remaining 1 cup shredded cheese; cover with foil.

Bake 55 min. Uncover. Bake an additional 5 min. or until hot and bubbly.
Refrigerate any leftovers.

Spicy Chicken Lasagna Roll-Ups

6 servings
1 jar (24 oz.) spaghetti sauce
1 tsp. Italian seasoning
1 tsp. crushed red pepper
3 cups shredded cooked chicken
2 cups shredded mozzarella cheese, divided
½ cup grated parmesan cheese
2 eggs, beaten
12 rinsed cooked lasagna noodles

Preheat oven to 375ºF.

Mix first 3 ingredients; combine ½ cup of mixture with chicken, 1 cup mozzarella, Parmesan and eggs. Spread 1/4 cup onto each noodle; roll up.
Pour ½ cup of the remaining sauce into 13×9-inch baking dish; top with lasagna rolls, seam-sides down. Cover with remaining sauce and mozzarella cheese.
Bake 25 min. or until heated through.
Refrigerate any leftovers.
Mac & Cheese Lasagna
4 servings
1 pkg. (7-1/4 oz.) macaroni & cheese dinner
½ lb. lean ground beef
1-1/2 cups spaghetti sauce
1 cup shredded part-skim mozzarella cheese
2 Tbsp. grated parmesan cheese
Preheat oven to 350°F.
Prepare macaroni and cheese as directed on package. Meanwhile, brown meat in skillet; drain.

Spoon half the macaroni and cheese into lightly greased 8-inch square baking dish; top with layers of half each sauce, meat and shredded cheese. Repeat layers. Sprinkle with parmesan.
Bake 20 min. or until heated through.
Refrigerate any leftovers.

Marie Callender’s Three Meat and Four Cheese Microwavable Family Size Lasagna

When I read the box it said you can microwave the whole thing. WHAT? Are you serious? That’s can’t be possible. Yes maybe I’m living in the dark ages thinking that a family size frozen lasagna couldn’t be microwaved. Maybe It’s been on boxes before and I just always assumed it wasn’t possible.

What sets Marie Callender’s Three Meat and Four Cheese Lasagna apart is its unique ingredients together with innovative baking tray that creates a homemade taste in minutes. Marie Callender’s Three Meat and Four Cheese Lasagna is available in single serve (19oz) and multi-serve (31oz) varieties to enjoy with your family and friends at grocery stores nationwide for a suggested retail price of $5.75.

Yes I cooked it in the microwave, I wished it had more cheese and I did find the noodles a little rubbery which is what happens when you cook things in the microwave. So I wish I would have made it in the oven after all. No it wasn’t a completely failure, I still enjoyed the taste and the meat was my favorite part. I had to have a second slice because I liked the spicy sausage so much.

The lasagna meats were a blend of three Italian-style meats (sausage, ground beef and pepperoni), layered with four different cheeses (Ricotta, Mozzarella, Parmesan and Romano), in a hearty marinara sauce that cooks in the microwave and is ready to serve in just 19 minutes, except I would prefer making it in the oven and having it take a little longer.

According to a national taste test, Marie Callender’s Three Meat and Four Cheese Lasagna is preferred over Stouffer’s 19 oz. Lasagna with Meat & Sauce by consumers two to one. Unwrapped with Michael Angelo’s Lasagna For Dinner Giveaway

Last night Michael Angelo’s Family Size Lasagna saved dinner in our house. I was on the go all day running errands and I didn’t have time to cook. So I popped in Michael Angelo’s in the oven for 45 minutes and continued on with my errands (my husband was home to make sure the house didn’t burn down). I was quite impressed with flavor and texture of the lasagna. Most importantly, it’s so easy to make for days like yesterday when I barley had a moment to myself. All you have to do is take it out of the freezer, lift one corner of the box to ventilate, place on a cookie sheet and place it in the oven at 400 degrees for 30 minutes and then take off the cover completely and cook for an additional 10 minutes or until it’s bubbly and the cheese is brown. (also see box for the exact temperature it needs to reach). I had to cook mine for an extra 10 minutes beyond what it requested. Ovens do vary!

Michael Angelos Lasagna

I liked it so much that I had some leftovers for lunch and we’re having it gain for dinner tonight. I’m not going to be wasting any of it. Michael Angelo’s started off with a mom cooking in her kitchen. Michael Angelo’s does not add preservatives, artificial additives or flavors to any of their meals.
