Gevalia Kaffe #MyBlogSpark

Did you know that I can have ground coffee in my Keurig. Yep, we purchased a single cup coffee ground holder the Keurig My K-Cup Reusable Coffee Filter for our Keurig and now I enjoy every kind of coffee one cup at a time whenever I want. So we’re trying Gevalia Kaffee courtesy of MyBlogSpark in our Keurig!.

The Swedes know a thing or two about coffee. They know quality coffee should be savored and enjoyed. They also know you deserve a more unique/special coffee experience than what you can pick up on every street corner. Something we know something about here in the Seattle area. There is more than one coffee on every block in Seattle because there is at least one Starbuck in addition to little mom and pop shops. We love our coffee here.

Gevalia has been refining the art of luxurious coffee since 1853 and has a deep history of finding and blending the finest Arabica coffee beans from locations around the world. Gevalia is a luxurious departure from the everyday, an escape from the routine cup of coffee, it brings the taste of Swedish-style luxury into your home. In Sweden, where they say that citizens drink more coffee than almost anywhere else in the world, Gevalia is their preferred brand. I can’t imagine that they drink more the Seattle does. Just can’t fathom that. In fact, Gevalia enjoys the honor of being an official coffee of the Swedish Royal Court. Wow, now that is an interesting fact!

Gevalia, now available at Safeway, brining an unexpected Swedish-style luxury and rich, never bitter taste to the Safeway grocery aisle.

Tasty Treats Thursday S’more Cupcakes Please Recipe

I love to bake! In fact I do it each week for my husband’s team meeting at work. There is a group of about 6 of them, but I usually just bake one batch of whatever the recipes is that I’m making if it makes more than 6 servings. In the past I’ve made Margarita Cupcakes for my Roundabouts cupcake sleeve review and Diane Henderik’s Strawberry Cheesecake using Nature’s Path cereals. So I thought I’d share my love with you with Tasty Treats Thursday. If you need a treat for something this week, or there’s a school or church bake sale coming up then you can WOW them with something fun. Not everything I make is glamorous as I actually bake for me – just for the fun of it.

This week’s goodness is best served warm, but my husband’s colleagues had to deal with fresh made but reheated to desired temperature.

S'more Cupcake

S’more Cupcakes Please!

WARE

double boiler (I don’t have one so I used a bowl balanced on a pot … be careful if you do the same!)
4 – 4oz. ramekins
medium size mixing bowl
wood spoon OR rubber spatula
4 serving dishes
electric handheld mixer
piping equipment
plastic bag
(to crush graham crackers inside or 2 bags if you use a bag instead of piping equipment)
metal spoon
(I used the back to crush graham crackers, and the spoon to place them on the cakes.)

CHOCOLATE – from allrecipes.com is “Chocolate Cakes with Liquid Centers”
This recipe makes four cakes. I had to make two batches to serve all 6 people – I’m not a fan of doubling recipes I’ve never tried in the past; so I literally made two batches.

½ cup butter
4 (1 ounce) squares bittersweet chocolate
(I used Kraft’s Baker’s chocolate which is what I had on hand in my pantry)
2 eggs
2 egg yolks
¼ cup white sugar
2 teaspoons all-purpose flour

1. Preheat oven to 450oF (230oC). Butter and flour four 4oz. ramekins or custard cups.

2. In the top half of a double boiler set over simmering water, heat the butter and the chocolate until chocolate is almost completely melted. (I don’t own a double boiler so I microwaved all if it for one minute and stirred, then a second minutes and stirred. Everything was all melted at this point).

3. Beat the eggs, egg yolks and sugar together until light colored and thick.

4. Beat together the melted chocolate and butter. While beating, slowly pour the chocolate mixture into the egg mixture, then quickly beat in the flour and mix until just combined.

5. Divide the batter between the four molds and bake in preheated oven for 7 minutes. The centers of the cakes will still be quite wet. Invert cakes on serving plates and let stand for 15 seconds, then unmold. (Typically you would serve immediately.)

MARSHMALLOW – I got a marshmallow tasting frosting recipes from a MOMS Club friend.

1 3/4 cups sugar
1/4 cup water
3 egg whites
1/4 tsp cream of tartar
1 tsp vanilla

1. Put sugar, water, egg whites, and cream of tartar in a heatproof container or on top of a double boiler and beat with electric mixer on high until opaque, white, and foamy, about 1 minute. (As mentioned, I don’t own a double boiler so instead I use a pot with a boil on top. If you too use this method because as it may not be sturdy.)

2. Put the bowl over, but not touching, a saucepan of barely simmering water or the bottom of a double boiler. The top container should sit firmly over the pan of hot water. Beat on high with electric mixer until frosting make stiff peaks that stand straight up when you stop the beaters and lift them out of the mixture, about 12 minutes.

3. Remover the container from the water, add the vanilla and continue to beat for 2 more minutes this frosting will become more firm as it cools on the finished cake.

GRAHAM CRACKER
My graham crackers aren’t homemade. I used La Panzanella Cinnamon Sweet Crisps which I love and buy in bulk from Costco. La Panzanella is local for me as they’re made in Tukwila, WA. I placed about 3 crackers in a Ziploc bag and crush to desired crumb size. I sprinkled them on top of the frosting as well as on the serving plate. I also garnished the top with a ½ La Panzanella Sweet Crisps.

I drizzled the plate with honey, as I typically used honey graham crackers in my s’mores, though this was more esthetic than for flavor.

5.00 Gift Ideas, Stocking Stuffers, and Home Made Baked Goods

I tried to make a video for this post 3 times and after the fourth time of not saving and having the kids distracting me I gave up. The kids were just excited to have all of the ingredients out to make fudge again. Why are we making Fudge again, because it’s a great home made baked gift that is easy to make, about 5.00 to make, and everyone loves it!

 

imageWalmart asked me to check out their prices and see if I could find everything I needed for 5.00 or less.

I packed up Miles in the van and off to Walmart we went. I set out just to get some baking goods, but then found so many other items that we use for cheaper than at the grocery store we usually go to, so I stocked up on things like refried beans, taco shells, and other necessities and I still came out of the store for under 25.00. We decided to make Fantasy Fudge, and only because the sugar was not as cheap as I was expecting it did actually cost us a little more than 5.00 to make Fantasy Fudge.

1 jar of Kraft Marshmallow cream (1.00)
Evaporated Milk (.78) Name Brand Carnation was only (1.00)
3 cups Sugar (2.59 of course you have to factor into how many cups of sugar are in the bag so this number is actually lower)
box and a half of Semi-Sweet Chocolate (1.79 + 89)
Butter (.89)
Vanilla (2.50)

Total just over 5.00

So I decided to make a video after all!

I started thinking about the fact that some of the items cost more, but you are only going to be using a fraction of it in the ingredients. So Fantasy Fudge is closer to 5.00 to make than I first realized.

Walmart also has a lot of recipe ideas for other baked goods to give to your friends, family, and neighbors. Try out these different recipes for under 5.00.

Cool Whip’s Dessert Challenge Giveaway

Wow it’s amazing how fast this time of year flies by. I was baking a lot at the beginning of the season but now with everything flying by me I haven’t had time to lift a baking finger.Kraft wants to inspire you and me to bake up something extra special, and with Kraft there are so many possibilities on making the perfect dessert. They sent me the most beautiful gift basket imaginable. I just haven’t’ had time to get creative. Well, we did make chocolate pudding but it was devoured so fast I wasn’t able to get any photos of that.  I did however make a beautiful Butternut Squash Pie and all it lacked was a dollop of Cool Whip.

Ingredients:

  • 1 9-inch pie shell
  • 2 cups pureed butternut squash
  • 1 cup light brown sugar, firmly packed
  • 3 large eggs
  • 3/4 cup evaporated milk
  • 3heaping teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 tablespoons all-purpose flour
  • 1 tablespoon melted butter
  • 1 1/2 teaspoon vanilla

Directions

Preheat oven to 350 degrees F. In a mixer, beat the squash with the brown sugar. Add eggs, evaporated milk, pumpkin pie spice, salt flour, butter, and vanilla. Beat until well blended. Pour the filling into the pie crust and  place in the oven. Bake for 45 to 55 minutes or until set. After 30 minutes place foil around the crust to keep it from getting too brown. DO NOT FORGET THE COOL WHIP!

I should warn you, I have always had a thing for cool whip. I’m one of those people that if left unattended, I will just lick the cool whip container clean. I like it frozen, all by itself, in hot cocoa and on almost any dessert. So get creative and make something sweet and don’t forget the cool whip!

New Lunchables Combinations Giveaway

I’ve always been a big fan of Lunchables, I’ll eat the crackers with the meat and I usually leave the cheese behind because it is so high in calories. That is the one drawback of most of the packages of Lunchables that are out there. However, they have lots of new options compared to when I was a kid. They are now considered to be more wholesome. They contain DOLE® Mandarin Oranges, 100% white meat chicken and bread made with 8g of whole grains. I’m not saying they are the most healthiest things out there to eat and we won’t be getting them all the time but for a quick pinch they are great. The calories are quite representative of the food in them. You feel like you are getting more food than the smaller Lunchables contain for about the same amount of calories. We were sent three of the New Lunchables Combinations to test out and try.
