Hungry Jack sent me some really great new waffle flavors. This included the Pumpkin Spice waffle mix and the Cinnamon Spice waffle mix. Both are really great for morning waffles and dinner! And if you listen to my husband on Facebook, he’s hoping for Waffles for Christmas. He posted this picture of us the other night after I made Hormel Waffles with Chunky Dark Chocolate Chips.
Which is what Hungry Jack is promoting, not necessarily that you eat their waffles on Christmas or anything but that you bring back breakfast to dinner! The waffles are delicious, and the mix is also great to get creative with and Hungry Jack has some really great ideas. Eating together and making memories as a family is so important and you can do that with breakfast. Breakfast at Breakfast time or lunch or at dinner. And I want to help you come up with ways to bring back breakfast to the dinner table.
ONE: Come up with recipes as a family. What does your family like to make. Do they like waffles, do they like eggs do they like sausage? Do they like olives? Use these ingredients to come up with a creative way to have what they like as a breakfast Dish. Hungry Jack has a recipe that combines my favorite type of food , Mexican, and serve it on a waffle
Corn Waffles With Chicken Chile Cream Sauce
CORN WAFFLES
3 1/2 cups Hungry Jack® Complete Belgian Waffle Mix
1 cup Martha White® Plain Enriched Yellow Corn Meal
2 1/4 cups water
1 teaspoon cumin
1 tablespoon finely chopped fresh cilantro
1 teaspoon salt
Crisco® Olive Oil No-Stick Cooking Spray
CHICKEN CHILE CREAM SAUCE
1 (10.75 oz.) can condensed cream of chicken soup
1/2 cup heavy cream or half-and-half
1 (4.5 oz.) can chopped green chiles
1/2 cup sour cream
1 teaspoon cumin
1/2 teaspoon smoked paprika
2 (6 oz.) packages Fajita-style seasoned chicken breast strips
3 tablespoons finely chopped fresh cilantro, divided
TOPPING
1/2 cup black beans, rinsed and drained
1/4 cup finely shredded sharp Cheddar cheese
Preparation Directions:
1. HEAT oven to 200°F. Place wire rack on baking sheet. Coat Belgian waffle iron with no-stick cooking spray. Set to medium-high heat.
2. For Corn Waffles: COMBINE waffle mix, cornmeal, water, cumin, cilantro and salt in medium bowl until smooth. Pour scant 1 cup batter onto waffle iron. Cook 1 1/2 to 2 minutes or until edges are crisp. Remove from waffle iron. Repeat baking 4 remaining waffles. Place waffles in single layer on cooling rack. Place baking sheet in oven to keep warm.
3. For Chicken Chile Cream: COMBINE soup, heavy cream, green chilies, sour cream, cumin and smoked paprika in 2-quart saucepan over medium heat, just until mixture begins to bubble. Add chicken, cooking until heated through. Remove from heat. Stir in 1 tablespoon cilantro.
4. For Topping: COMBINE cheddar cheese and black beans. Cut each waffle into quarters. Arrange waffle quarters on plate. Top each serving with 3/4 cup chicken Chile cream sauce and 3 tablespoons bean mixture. Sprinkle with cilantro.
Now my second Tip is to be ok with semi-home made. It’s ok if you’re not the perfect gourmet cook. I love making things semi-home made because then it saves time and allows me to be even more creative. And Hungry Jack has lots of ideas and ways on their recipe page that you can use their box mixes and make a fabulous dish like the Cheesy Potato Pancakes with Sausage.
My third tip is of course to get the kids involved. Letting the kids help make the dish will se the mood for perfect family time. My kids love to cook and love to help me throw things in the blender. Just do it, have a great family night and make it breakfast!
