Easy Caesar Salad With Sweet Peppers, Kale & Bacon

Last night, I made this super easy and very tasty salad and wanted to share it with you, since I find that it’s easy to get burned out with salad. Just a few small additions can really make the difference between a “Blah” salad and a delicious one! Plus, since this salad is so quick to make, it’s perfect for nights when you’re too tired to do much cooking.

Caesar Salad With Sweet Peppers, Kale & Bacon

Ingredients:
All amounts are “To taste” so use as much or as little as you like!

Fresh Express Caesar Salad Kit – includes iceberg lettuce, Parmesan cheese, croutons & dressing
Kale stems – When I make kale chips, I rip the leaves off the stems and then save the stems in a bag to use in salads.
Hormel Real Crumbled Bacon
Sweet mini peppers, chopped

Directions:

Layer lettuce, kale and peppers in a bowl. Sprinkle with cheese and bacon, then top with croutons. Drizzle salad dressing to taste.

Garlic Brussels Sprouts With Bacon

Brussels sprouts get a bad rap, but they’re really delicious – especially when cooked win bacon! Here’s a simple side dish I made tonight that got rave reviews:

Garlic Brussels Sprouts With Bacon

Ingredients:

10 Brussels sprouts, halved
Roughly 1/4 of a yellow onion, chopped
3 cloves garlic, peeled and minced
3 TBSP Hormel Real Crumbled Bacon
Safflower oil
Sea salt

Directions:

Layer the sprouts, onions and garlic on a foil-covered pan. Sprinkle the bacon over the vegetables, then drizzle the mixture with Safflower oil. Sprinkle with sea salt.

Heat oven to 350 degrees and cook for roughly 25 minutes or until done, turning the sprouts periodically.

Memorial Day is right around the corner, and with it comes the kickoff of grilling season! I love grilling, and even when the weather is bad, I can always pull out my trusty George Foreman grill for an easy meal. After I got back from a recent trip, Jai decided to make a quick meal for us by grilling up a HORMEL ALWAYS TENDER Teriyaki Pork Tenderloin.

This pork tenderloin is infused with a delicious Teriyaki sauce – so, so good! This would be perfect to slice up and put on skewers with veggies for a BBQ, because you don’t even have to season it – it’s ready to cook as-is. And grilling is all about simplicity!

Leftover Turkey Recipe: Greek Turkey Kabobs #HormelFamily

Leave it to leftovers to keep you in the holiday spirit even after your big meals are over and done with. To help expand your post-feast repertoire (a great left over turkey recipe), Hormel Foods has compiled a list of new ways to enjoy leftovers this holiday season. Impress your family and friends with this creative and tasty option:

 Looking for a new approach for all that leftover Thanksgiving turkey? Create Greek Turkey Kabobs by cutting Jennie-O® Turkey Store® oven roasted turkey breast into cubes and alternately threading them onto skewers with cucumbers, tomatoes and Peloponnese® kalamata pitted olives. This Mediterranean twist might just convert reluctant turkey eaters! 

Greek Turkey Kabobs:

Ingredients

Servings: This recipe is recommended for 8 servings

  • 2/3 cup lemon juice
  • 3 tablespoons mild olive oil
  • 2 cloves garlic, finely chopped
  • 1 teaspoon dried rosemary leaves, crushed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 pounds JENNIE-O® Oven Roasted Turkey Breast, cut into 1-inch cubes
  • 16 cherry tomatoes
  • 1 small cucumber, cut in half lengthwise, seeded and cut into 3/4-inch slices
  • 16 PELOPONNESE® Kalamata Pitted Olives
  • Hot, cooked parsley rice pilaf

Directions

  1. In medium bowl, combine lemon juice, oil, garlic, rosemary, salt and pepper. Add turkey; stir to coat. Cover; refrigerate 30 minutes to marinate.
  2. Meanwhile, prepare grill for medium heat or heat broiler.
  3. Alternately thread turkey, tomatoes, cucumbers and olives onto 8 metal skewers. Grill 6 inches from heat source, turning and basting often with marinade, 5 minutes or until turkey is browned and cooked through. Serve with hot rice pilaf.

Chicken Pesto Pizza Recipe #HormelFamily

More often than not, mom and dad are stuck in the kitchen while the kids are occupied elsewhere during meal time preparation. Make the kids a part of the Pizza Month mealtime experience and it can be a fun and educational journey!


Start off the experience by shopping for ingredients together. Let your kids write out their own lists with their favorite toppings and allow everyone to make an individual pie!
Make the food preparation process fun. Let kids cut their dough and toppings into fun shapes; encourage creativity while cooking

Put a theme to your family pizza night! Do you want to pretend you are having a meal in the streets of Italy? Can your kid’s design the kitchen to match their favorite pizza restaurant? Put up decorations and set the table to round out the experience.

Cooking can be an educational experience, as well. Use cooking to educate your children on family history and recipes. Cooking also teaches kids about kitchen safety and proper handling of measuring and cooking tools.

Here is a recipe to get you started:

Chicken Pesto Pizza

Chicken Pesto Pizza Recipe

Ingredients:

1 (12- to 14-inch) prebaked pizza crust
1/2 cup pesto
1/2 cup finely minced sun-dried tomatoes
1 (5-ounce) can Hormel® Chunk Breast of Chicken, drained and flaked
1 small bell pepper, thinly sliced into rings
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese

Directions:

Heat oven to 400ºF.

On baking pan, place pizza crust. Spoon pesto over crust. Top with remaining ingredients.

Bake pizza 12 to 15 minutes or until cheese is melted and edge is lightly browned.

· The Derby is frequently referred to as "The Run for the Roses" because a garland of red roses is awarded to the Kentucky Derby winner each year. The horse’s garland is made up of 554 roses, but you’ll only need a few to set the pace. Show off a dozen long-stemmed beauties in a treasured vase, or cut your roses short, in the French style, to keep a low profile among your food presentation. Carry out the theme with red napkins, candles, or paper party ware.

Honey Roasted HamHoney-Roasted Ham Biscuits

Ingredients:

  1. 1 (10-ounce) can refrigerated buttermilk biscuit dough
  2. 2 cups Hormel® Cure 81® diced ham
  3. 1/2 cup honey mustard
  4. 1/4 cup finely chopped honey-roasted peanuts, divided

Directions:

  1. Heat oven to 400°F.
  2. Separate biscuits. Place in muffin pans, pressing gently into bottom and up sides of pan.
  3. In bowl, combine ham, mustard and 2 tablespoons peanuts; mix well. Spoon ham mixture evenly into biscuit cups. Sprinkle with remaining 2 tablespoons peanuts.
  4. Bake biscuits 15 to 17 minutes or until golden brown

Celebrate Earth Day With Earth Saving Tips from Hormel #HormelFamily

Did you know that April 22nd marks the 42nd anniversary of the celebration of Earth Day? I had no idea it was around that long, does knowing that change your mind about how important it is? For me it means I’m going to considering doing something with my kids especially after listening to Jane Goodall talk during my interview with her for the Premier of Chimpanzee about the earth and how we aren’t doing enough to bring about change. Earth day is a great start but it’s going to take us doing these things every day to make a difference.

This year, the Earth Day Network announced that the main focus of Earth Day will be to continue building the environmental movement and engaging new environmental activists around the globe. In order to make Earth Day a success, it is essential that each and every person set environmental goals, contribute and do their part including major companies like Hormel.

Did you know that about 80 percent of Hormel Foods’ product packaging by weight is recyclable and/or made from recycled materials? Over the past few years, Hormel has found many ways to reduce, revamp and change the size and material of their packages. In 2009, a half-inch in height was removed from each Jennie-O Turkey Store turkey burger carton, generating an annual paperboard savings of more than 68,000 pounds! There are plenty of simple ways that you and your family can help that won’t feel like you are overhauling your lifestyle but they still make a difference. Jane Goodall says that we need to be aware of what we purchase and how it was made, just an FYI from taken away from my interview with her.

 

These tips are from Hormel:

• Plan an eco-friendly picnic! Skip paper plates and bring along utensils and dishes from home. Pack products that are known for their eco-friendly and sustainable packaging. • Take a shorter shower or brush your teeth without running the water. Not only will you reduce water consumption, but the energy costs associated with heating the water.

Strawberry Pork Chops Recipe #HormelFamily

I had to get creative the other night for dinner. I was cleaning out the freezer and I found some Hormel Pork chops and strawberries and as you can see from the photo the strawberries were a little frosted so they definitely needed to be used.

IMG_8649 I completely made up this recipe and when my husband saw me making it he made a face like, no way am I going to eat that. But guess what, he tried it and he liked it. It was great.

I used Welch’s Natural Strawberry spread

Butter and a little bit of water

The Hormel Smoked Pork Chops

Strawberry Pork Chops Recipe

Ingredients:

Hormel Thick Cut Smoked Pork Chops 15 oz
2 cups frozen strawberries
3 table spoons butter
2 table spoons water
3/4 cup Welch’s Natural Strawberry Spread

Directions:

Heat the oven to 450

Mix the butter, jam and water.

Heat up for 30 seconds and stir, then heat up until the butter is melted and stir again

Place Pork chops in a oven safe cooking dish

Place the frozen strawberries on top

Pour your jam mixture over the pork

Cook in the oven until the pork temp reaches 155 degrees (about 30 minutes)

Spice Up Your Salad With Turkey Pepperoni #HormelFamily Recipe

I was quite surprised when my husband told me that he actually liked the turkey pepperoni. Usually if something is healthy he’s not at all interested in it. I’ve used the turkey pepperoni before but not sure that he was actually home to try it. He went out to the store and bought this round of turkey bacon because he’s trying to eat healthier. His mom had a triple bypass surgery not too long ago and it reminded him that so many of his family members have died from heart attacks. So maybe he’s finally going to start trying more healthy food.

I decided to make a healthy salad for dinner one night. I cut up zucchini, cucumbers, tomatoes, spinach, lettuce, carrots, bell peppers and used hummus as the salad dressing. It was amazing. We topped it off with some cheese and turkey pepperoni. Quite a healthy meal right?

Turkey Pepperoni Salad Recipe:

Ingredients:

Veggies of your choice:

zucchini
cucumbers
tomatoes
spinach
lettuce
carrots
bell peppers
hummus
garlic
cheese chunks
turkey pepperoni strips

Directions:

wash and cut all your veggies
toss together
mix some garlic with your hummus
top your salad with small amount of hummus, cheese and turkey pepperoni

Serve!
