Incorporating More Greens, Organic Spinach, Roasted Broccoli and Roasted Seaweed Snacks

Earthbound Organic Spring Mix

This year my goal has been to feed the whole family a “greener” diet. My eye doctor took a 3D image of my eye and said that it would be helpful if I ate more greens. Before I started making small changes, my green veggies consisted of peas and green beans. That’s about all I really like. I do like broccoli and asparagus but I’m the only one in the family that will eat it so it’s been a challenge to make those and see them go to waste.

I finally decided that doesn’t matter. I’m going to make those greens and try to find ways that the kids will enjoy them too!

I started off with buying Earthbound Farms Organic Spring Mix in bulk at Costco. I switched out the Peanut Butter and Jelly sandwiches for Turkey and Spring Mix and the first day was a disaster but they ate it and actually enjoyed it. In fact, every now and then Turkey and “salad” as Zoe likes to has been requested at lunch time. We also have salad  with as many meals as I can get away with. I mean, if I’m buying salad mix in bulk Annie Chun's Roasted Seaweed Snacks_Sesamethen we’re going to eat as much of it as we can before it goes bad.

Another mom told me how to get my kids to eat broccoli. She roasts hers with some salt and olive oil in the oven and her kids love it that way. I’m sure this would work for asparagus too and since Zoe likes to cook so much if I let her do all the preparation she’ll be more likely to try it out afterwards.

Finally, you can add some greens to your diet by eating Annie Chun’s Roasted Seaweed Snacks. Bursting with flavor and full of vitamins and minerals, this new snack will keep you going all day long.  Seaweed Snacks come in two varieties: Sesame Seed and Wasabi. I hate to say this, but I’m not a fan of Seaweed. Annie Chun’s asked me to do a review of their seaweed and I knew going into this that I’m not a big fan of seaweed. I was really hoping that as a snack in a box and not prepared as sushi that I would like it. As soon as I opened it, it smelled just like seaweed and I tried it. Still not a fan. But my neighbors LOVE IT! They eat a lot of Korean food (One of them is half Korean) Annie Chun’s Korean seaweed is roasted to perfection and then seasoned with a dash of salt and sesame seed oil, creating a savory taste sensation that promises to excite your palate. The Seaweed snacks are chock-full of vitamins and minerals to keep you going all day long.

Fitness Friday – I need to focus

My Computer calls me every day and I get so distracted. I’m not doing what I need to do for my body. I have plenty of time during the day because after getting up at six I no longer sit in the chair with the kids and go back to sleep while I let them watch Dora or some other crazy kids DVD.

At least the sun has almost as strong of a pull on me as the computer. It pulls me to go outside and that’s what is healthy for my children. I need to do more than I already do. Today it was cold though, it was hard for me to stay outside. Oh how I hate the cold.

So is it needless to say that this week was a waste. I did not exercise, I ate brownies, Godiva truffles, and very fattening meals. GO ME!

 

I can do better!

Fitness Friday – just keeping up

I’m trying very hard to continue to be consistent. In my blog, in my exercise just in my life. However, I’m finding that I’ve been exhausted this week just trying to keep up. Perhaps it’s just adjusting to taking my husband to work again every day. We have to get up at six instead of 8 it is a huge difference. I have been taking the kids to exercise and my daughter is actually loving the walks now. I’m so happy about that too because we can go for longer ones if she’s not whining the entire way. So we’re all moving a lot more and I think she looks great. She has more energy and is laughing a lot more.

This is what I need to do:

I need to get out of bed, get the kids ready, take my husband to the bus stop, come home, fix breakfast and then do my exercise while the kids are eating. I’ve been told that it is good to eat after exercise so then I’ll have breakfast. I was also told to have a protein and a high complex carb. So this next week I’m going to try and take things to an even higher level. I think by adding to my routine then I’ll be feeling as good as Zoe is. Oh how our children can be so very inspiring.
