Gingerbread Waffles with Cream Cheese Icing Recipe

It’s almost 2014 and more than 50% of Americans vow to appreciate loved ones and spend more time with family and friends this year.  One great way to do that is right in your kitchen, spending time baking with kids.

Krusteaz baking brand recently partnered with Weelicious founder and cookbook author, Catherine McCord who created recipes like Gingerbread Waffles with Cream Cheese Icing. I have permission to share this recipe with you.

Krusteaz Gingerbread Waffles with Cream Cheese Icing

Gingerbread Waffles with Cream Cheese Icing Recipe

Ingredients

1 package Krusteaz Gingerbread Cookie Mix

1/2 cup water

1/4 cup vegetable oil

2 large eggs

1 cup whipped cream cheese, or regular cream cheese at room temperature

2 tablespoons honey

Directions:

Preheat waffle iron.

In a bowl, combine the gingerbread mix, water, vegetable oil, and eggs and mix well.

Allow batter to sit 5-10 minutes to thicken.

Pour batter into greased waffle iron, filling according to manufacturer’s directions.

Cook for 5-6 minutes until golden, or follow manufacturer’s directions.

Remove to a cooling rack. Waffles will crisp as they cool.

In a small bowl, combine the cream cheese and honey, and serve with the waffles.

Good Cook sent us some  really awesome products for us to use this Halloween. The most fun out of the products they sent us was the Good Cook Creative Creations Haunted Halloween cookie Cutters.

IMG_8951 This particular set was very fun for the kids and me. I didn’t want them to help me because I’m a perfectionist, however, cooking should be a family event and perfection should be out of the equation because spending time as a family in the kitchen should

The recipe is included on the box and for the icing I had to do a Google search. I wanted something that I knew would be stiff and I found a recipe that called for 2 egg whites beaten added to 2 cups of white powdered sugar. It worked great, but my gingerbread house had an accident and turned out like this as this is our experience with the Hunted House Cookie Cutter Set.

We decided that it makes a great snack holder. Ours is filled with popcorn, candy corn and peanuts.

FamilyFun Marshmallow GingerKids Recipe

Here’s another very easy recipe to make from , FamilyFun Magazine (familyfunmag.com) , no baking involved, just melt some chocolate.

Marshmallow GingerKids Recipe

Ingredients:

Large Marshmallows
Mini Marshmallows
1/2 cup sugar
2 teaspoons cinnamon
1/2 teaspoons ginger
1 cup white chocolate chips

Directions:

Combine 1/2 cup sugar with 2 teaspoons cinnamon and 1/2 teaspoons ginger in a medium bowl and set it aside.

Fill another medium bowl with water. Melt 1 cup white chocolate chips according to the package directions, then transfer the chocolate to a ziplock bag and snip off a corner.

To form each pop, slide two marshmallows onto a lollipop stick. Use the melted chocolate to adhere mini marshmallow arms and legs as shown. Let the chocolate set.

Dip the pop in the water, then roll it in the sugar mixture until coated.

Pipe on a chocolate face, then use more chocolate to attach heart and confetti sprinkle buttons, bows, and bow ties.

FamilyFun Gingerbread Biscotti Recipe

Oh my, I’ve got to get off my computer and stop looking at all the really great recipes out there. The recipes on FamilyFun Magazine (familyfunmag.com) are making me so very hungry. I found this Gingerbread biscotti recipe and I have permission to re-share with you guys. It looks so good and I haven’t made biscotti in four years. It’s actually really easy to make so I’m going to try this really soon and recommend that you do too.  gingerbread biscotti

FamilyFun Gingerbread Biscotti Recipe

Ingredients

2 cups flour
1 teaspoon baking powder
1 1/2 teaspoons ginger
3 teaspoons cinnamon
1/4 teaspoon salt
6 tablespoons unsalted butter, softened
1 cup sugar
2 large eggs
3 tablespoons light molasses
2 teaspoons vanilla extract
8 ounces white chocolate chips

Directions:

1. Heat the oven to 350 degrees and coat a baking sheet with cooking spray. In a medium bowl, whisk together the flour, baking powder, spices, and salt. In a stand mixer set on medium speed, beat together the butter and sugar until fluffy. Add the egg, molasses, and vanilla extract and mix until well incorporated. Reduce the mixer’s speed to low and blend in the flour mixture.

2. With slightly wet hands, halve the dough and shape each piece into a 2 1/2-by-9-inch rectangle. Transfer the loaves to the prepared baking sheet and bake them until they’re golden brown and their tops are just starting to crack, about 25 minutes. Let the loaves cool on the sheet and reduce the oven’s temperature to 325 degrees.

3. Use a sharp knife to cut each loaf into 3/4 inch thick slices. Place the slices cut side down on the baking sheets and bake them until they’re toasted, about 8 minutes. The pieces should be crunchy on the outside but not hard. Transfer them to a rack to cool completely.

4. Melt the white chocolate chips in a heat-safe bowl according to the package directions, then spoon it into a ziplock bag and snip off a corner. Drizzle the biscotti with the melted chocolate. Let the coating set before serving.
