Strawberry Doughnuts Recipe

Strawberry Doughnuts

I’ve always loved homemade doughnuts. I remember when I was a kid, my mom made doughnuts from scratch once or twice – she didn’t think they turned out very good because she was always critical of her own cooking, but I always said, “Mom, those were SO GOOD!”. I really need to try my hand at it myself someday. And now I have another recipe, thanks to this strawberry doughnut recipe that came across my desk yesterday! This was aired as part of a cooking demo on Veria Living TV network’s show The Juice. Doesn’t this sound so good?

Strawberry Doughnuts

Ingredients:

· 4 large eggs, room temperature

· 3 tablespoons butter, melted

· ½ cup coconut milk

· 1/3 cup agave

· 1 teaspoon vinegar

· 1 teaspoon vanilla extract

· ½ cup coconut flour

· 1 teaspoon baking soda

· ¼ teaspoon salt

Strawberry Glaze:

· 4 strawberries, minced

· 1-2 teaspoons coconut milk

· 1 cups confectioners’ sugar

Directions:

1. Preheat the oven to 350 degree and grease the doughnut with non-stick cooking spray.

2. Using a stand mixer, beat eggs, butter, milk, honey, vinegar and vanilla on medium-high speed until creamy.

3. Add coconut flour, baking soda and salt. Beat on high until smooth.

4. Scoop the batter into a large ziploc bag, seal the top, and snip one of the bottom corners.

5. Pipe the batter into the doughnut mold, filling it completely.

6. Bake for 17 minutes. Remove the doughnuts and cool on a wire rack.

7. When cooled dip doughnuts into strawberry glaze (directions below).


For the glaze:

8. Mix confectioners’ sugar and 1 teaspoon of coconut milk in a small bowl. Add remaining teaspoon of coconut milk if it’s too thick. Stir in minced strawberries.

FamilyFun: St. Patrick’s Day Leprechaun Donuts Recipe

Need a super easy snack recipe for spring? FamilyFun magazine has a very cute and easy way you can delight your child with donuts for breakfast. Or even let them create these donuts themselves it’s easier then you think. You can tell them it’s food fit for a leprechaun.

Leprechaun Doughnuts

Ingredients

Chocolate sprinkle:

O-shaped cereal
Dark or white chocolate
Colored sprinkles

Cinnamon sugar:

O-shaped cereal
Sugar
Cinnamon sugar

Directions

Lure wee visitors this Saint Patrick’s Day with O-shaped cereal disguised as tiny doughnuts. Prepare each variety following the steps at right and let dry on waxed paper. Add to the fun by placing them in a miniature box (get our template at familyfunmag.com/printables).

Chocolate sprinkle:

Dip the tops of O-shaped cereal into melted dark or white chocolate (the tines of a fork work well for this) and cover with sprinkles.

Cinnamon sugar:

Over medium-high heat, dissolve ½ cup sugar in ½ cup water. Let it cool. Dip the O’s, a few at a time, in the syrup, then toss them in a small bowl of cinnamon sugar.

We made Maple Bacon Bites last week and this week we made Funfetti Donut Kisses.

Each time we made these Miles Zoe and I had these treats as an after school snack. I love how easy they are to make and since they are so easy to just throw together it’s easy to make them even more fun with our own additions. And of course they are easy to enjoy, just pop them in your mouth and watch them disappear.

Most importantly it’s this time after school that we use to spend together. We catch up on our days and share things that made us happy and things that might have been difficult. It’s little moments like these that the kids are going to remember and share with their families when they grow up and kids grow up so fast. I want to capture each moment that I have and encourage others to do the same.

Pillsbury Funfetti Lil’ Donut Kisses Recipe

Ingredients:

Box of Pillsbury Funfetti Maple Glazed Lil’ Donut Kit
1/3 cup water
1/4 cup butter (softened)

24 Chocolate Kisses

Directions:

Mix donut mix according to directions

Then after you place each donut on the tray insert a chocolate kiss into each donut upside-down (flat side up)
Mix glaze according to directions
Bake according to directions

Then glaze each donut and cover with sprinkles

Having used the Keurig Coffee machine for years now I’ve narrowed down my favorite flavors and brands. My favorite brand is the Donut House collection followed closely by the Tully’s Brand. The thought of drinking a donut was at first a scary idea. Most flavored coffees fail unless it’s your favorite flavor, my favorite flavor is vanilla and I like almost every coffee with that flavor. Chocolate has always been a harder flavor to put into coffee with success in my opinion. So I tried the Donut House Chocolate Glazed Donut flavor a year ago with much skepticism. Guess what, We Love the Donut House chocolate glazed donut flavor, both my husband and I. And when we tried the Extra Bold Donut house we were equally surprised at how good it was being plane. Tomorrow is National Doughnut Day: Free Doughnut at Krispy Kreme

My husband came home yesterday and said, “do you know that Friday is national donut day?” Where he works they already celebrated national donut day as part of their Wednesday snack attack. I bet they have even more donuts on Friday though, just to make sure everyone really gets the chance to celebrate national donut day. Krispy Kreme is being kind enough to make sure everyone in my office (you know, the living room that I try to work out of while the kids are taking a nap and after they go to bed and I should be spending time with my husband kind of office) is able to enjoy national doughnut day too. I love donuts and when I was pregnant, my husband had to drive 30 minutes both ways to get me some donuts from the closest Krispy Kreme. Nom Nom Nom!

On Friday, June 3, participating Krispy Kreme stores across the country will offer every customer one free doughnut! Krispy Kreme is honoring one of America’s tastiest treats and paying tribute to its guests by giving each person a free doughnut in any variety. The Krispy Kreme shops throughout the Seattle area are participating in this promotion.

National Doughnut Day was established in 1938 by The Salvation Army to raise funds to help people in need. In honor of the 73-year-old holiday, Krispy Kreme is once again giving each guest who visits a participating U.S. Krispy Kreme shop on June 3 one FREE doughnut of any variety. I have a story as to way Mr. Miles didn’t get to eat the doughnut in front of you guys. You see, the day we went to Krispy Kreme to try the doughnuts was the day before my birthday. We had so many errands to run that we picked up the doughnuts and took them home. We tried them later that day and I figured, there’s five more in the box, I’ll get a photo of him eating one before they are gone. Umm, I blinked and my husband and I had eaten them all. Oh they were so good. They are now my FAVORITE doughnut to get at Krispy Kreme. Yum Yum Yum!

Oh and be sure to wash everything down with the Cookies & Kreme chiller.

Another Krispy Kreme Not So Wordless Wednesday BANANAS

Miles and I had another great visit to Krispy Kreme Doughnuts and enjoyed some of their banana flavors.

Now through April 24th if you visit Krispy Kreme, Miles says you should try the Banana Kreme Pie Doughnut with Banana Kreme filling dipped in white icing and topped with Nilla wafer pieces. He also suggests that you try the Banana Caramel Cake doughnut made with real bananas and glazed and if that wasn’t enough it is drizzled with caramel icing. I thought the Banana Caramel Cake doughnut was a little too sweet. I’m very sad to say that we missed out on the opportunity to try the Chocolate Krispy Kreme Chiller® and I was really looking forward to trying it, it’s described as “a chocolate lover’s dream” having a rich and creamy texture and topped with whipped cream. Oh yum!
