Taco Cupcakes in Bacon Lining Recipe #HormelFamily

For the love of bacon, what could be better than a taco cupcakes with a bacon lining. Not much I think. Check out how Hormel combines their bacon with taco mix, salsa and guacamole.

Taco Cupcakes in Bacon Lining Recipe

INGREDIENTS
½ pound HORMEL® BLACK LABEL® Cob Smoked bacon
½ pound ground beef
1 tablespoon taco seasoning
¼ cup water
½ cup canned black beans, drained and rinsed
½ cup whole kernel corn
½ cup shredded Cheddar cheese
½ cup shredded lettuce
½ cup WHOLLY SALSA® dip
¼ cup WHOLLY GUACAMOLE® classic dip
¼ cup sour cream, if desired

DIRECTIONS
1. Heat oven to 400°F. Grease outside of 6 (6-ounce) custard cups. Invert cups onto baking sheet. Cut each bacon slice in half. Arrange 4 half-slices of bacon side-by-side on work surface. Weave 4 bacon half-slices of bacon in opposite direction. Carefully lift bacon lattice and place over custard cups. Press to shape over the cups. Repeat with remaining bacon and custard cups. Bake 30 minutes or until bacon is cooked and browned. Remove from oven; let stand 15 minutes to cool.
2. In skillet, cook ground beef 5 to 10 minutes or until no longer pink; drain. Add taco seasoning and water. Simmer 5 minutes or until thickened. Stir in black beans and corn. 
3. Remove bacon cups from custard cups. Fill bacon cups with taco mixture. Sprinkle with cheese, lettuce, salsa, guacamole and sour cream, if desired. Serves 6.

Tequila Shot Cupcakes Recipe Using Truvia

So I’m part of this blogger challenge with ABC Family’s Young & Hungry. It’s just a fun challenge that I thought I would participate in. The winner gets to have their blog named on the TV show. It’s a voting challenge so I’m not doing very well, which is fine, it’s still fun to participate and because of it I created this fantastic recipe and I used Truvia Baking Blend as the sweetener.

 

Tequila Shot Cupcakes

Tequila Shot Cupcakes Recipe

Ingredients:

1/4 cup lime juice
1 1/2 teaspoons lime zest
1 cup skim milk
1/4 cup canola oil
2 tablespoons tequila
1/2 teaspoon vanilla extract
3/4 cup Truvia Baking Blend
1 1/3 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

 

Directions:

Heat the oven to 350 degrees

In a mixing bowl beat the egg, add the sugar, then the milk and oil and lime zest.

Then add the tequila and lime juice

Mix all the dry ingredients in a separate bowl and slowly mix into the mixer.

Then cook the cupcakes for 20-22 minutes.

Celebrating More Boldness with Pillsbury Funfetti Giveaway

I really like having something special for the kids every now and then and with the Funfetti something special takes no time at all. You just need a package, 2 egg whites, 1/4 cup of oil and 2/3 cup of water, mix and toss in the oven and viola you have instant cupcakes.

I quickly made a batch of Funfetti cupcakes for an afterschool snack one day last week and the kids LOVED it. I used the orange Funfetti mix and added some fun Funfetti frosting to some of them, and the color combination ended up looking like a pumpkin. At least that’s what the kids told me. I was going for a flower but yeah, it didn’t work out for me so well. I don’t have any piping skills yet.

Zoe and Miles both loved the ones that I put on a stick. You know, Iike I mentioned in the other post, Care to Go Bold With Pillsbury’s #GoBold Funfetti Challenge, just adding a stick to something you create is a simple way to change something in a bold way that kids attack!

Carrot Cake Cupcakes

Carrot Cake Cupcakes

Last month, I hosted a dinner at my house and wanted to bake a carrot cake, so I pulled out one of my favorite vintage cookbooks, Favorite Recipes of America: Desserts. This cookbook was published in 1968, and as far as I’m aware it’s not in print any more, but there are several used copies available on Amazon, which is cool! I love this cookbook and refer to its carrot cake recipe any time I make one. This cookbook compiled recipes from people all over the country, and this tasty recipe was submitted by Sharon A. Longaker, who won a blue ribbon at the Kentucky State Fair for her efforts. Because I wanted to make this recipe sugar free, I made a few adaptations to it, including the fact that I baked it as cupcakes rather than using a tube pan. This way, I was able to frost some cupcakes and leave the others plain.

Carrot Cake Cupcakes

Sugar free carrot cake cupcakes, adapted from a classic recipe!
Ingredients
  • 1½ cups vegetable oil
  • ¾ cup Truvia Baking Blend
  • 4 egg yolks
  • 4 egg whites
  • 5 TBSP hot water
  • 2½ cups flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 1 tsp nutmeg
  • 1½ cups grated raw carrot
  • 1 cup chopped walnuts
Instructions
  1. In a large bowl, cream oil and sugar together. Add egg yolks to the mixture one at a time, followed by the hot water. Add flour, baking powder, baking soda, cinnamon, cloves, and nutmeg, mixing thoroughly. In a separate bowl, beat the egg whites until soft peaks form, then fold into the cake batter.
  2. Place cupcake liners into two trays and preheat your oven to 350 degrees. Spoon batter into liners - an ice cream scoop works well for this - and fill liners with batter. Depending on the size desired, you can fill each cupcake liner ¼ to ⅔ of the way full. My first batch was slightly larger than the second, so my total yield was 23 cupcakes.
  3. Bake cupcakes until a toothpick tests clean in the center. I forgot to write down the time I took mine out at, but it was maybe 45 minutes - the original recipe calls for 60-70 minutes when baked in a 9" tube pan. I also goofed and baked them at 250 degrees for the first 20 minutes because I read the dial wrong! Bottom line, this recipe is resilient, so adapt it to suit your needs!

Sugar Free Carrot Cake Cupcakes

Since this is a stout cake, I left half of the cupcakes plain so that they could be enjoyed almost like a muffin. Eaten plain, these cupcakes should be suitable for those with diabetes. This recipe was created 40 years before Truvia Baking Blend was invented, and it worked great – so it’s easy to adapt any classic recipe to work with Truvia. Try toasting one of of these cupcakes with butter – mmmm!

Carrot Cake Cupcake With Frosting

I used a traditional cream cheese frosting on the other half, for those who can consume sugar. The frosting recipe for this cake in the original cookbook calls for 3/4 of a margarine stick, 4oz cream cheese, 2 teaspoons of vanilla and 1 box of powdered sugar. Since my margarine was in a tub rather than stick – not to mention my powdered sugar being in a large bag rather than the standard small box this recipe called for – I just improvised and “Eyeballed it”, especially since I didn’t need as much frosting with only half the batch getting any. I used all the same ingredients in proportions that “Looked about right”, and it worked out great!

Red Velvet cupcakes are made with an all natural deep red cake with a creamy chocolate truffle center and cream cheese-buttermilk fluff frosting. Wow, the truffles in the center were so very good.
