Good Cook Cupcakes Carrier & Pumpkin Cupcake with Pumpkin Cream Cheese Icing Recipe

I decided to spend the day making some last minute Halloween goodies and at the top of my list was a pumpkin cupcake with Pumpkin cream cheese frosting.

Here is another Pumpkin cupcakes recipe including our Cream Cheese Frosting and we’ve included a photo of the GoodCook Cupcake carrier we received from GoodCook.

Pumpkin Thor Dark World Cupcakes Recipe

INGREDIENTS:

  • 1 1/2 cups All-purpose flour
  • 1 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Ground ginger
  • 1/4 tsp Ground allspice
  • 1/2 cup Unsalted butter, at room temperature
  • 1/2 cup Pumpkin puree
  • 1/2 cup Buttermilk, at room temperature
  • 1 tsp Vanilla extract
  • 1/2 cup Pecans, chopped

DIRECTIONS:

1. Tools needed: Good Cook Nonstick Muffin Pan, 12 cup

2. Preheat oven to 350 degrees F. Line a muffin pan with paper liners and set aside.

3. Place flour, baking powder, baking soda, salt, cinnamon, ginger and allspice in a large bowl, whisking to combine.

4. Place butter in the large bowl of an electric mixer. Add sugars and beat at medium speed until light and fluffy. Add eggs one at a time, beating after each addition. Add pumpkin puree, buttermilk and vanilla, beating to combine.

5. Gradually add flour, beating until batter is smooth. Add pecans and stir just to combine.

6. Spoon into prepared muffin pans and bake until a toothpick inserted into the center comes out clean, 16-20 minutes.

7. Remove from heat and let cool on wire racks to room temperature before glazing.

The Cream Cheese Icing Recipe

Ingredients:

8 ounce cream cheese (room temperature)
1/4 cup sugar
1/2 cup canned pumpkin
1 Tablespoon pumpkin pie spices

Directions:

Mix all the ingredients together.

Food Network Holiday Gift Guide

My husband recently purchased me a subscription to the Food Network Magazine. I’ve browsed through it a few times and looked at their decorating gift ideas and found some of them to be very creative. They didn’t exactly look like they could be accomplished in five minutes or less so I didn’t even try them out. Magazines are a perfect way to collect extra coupons. In fact, most magazines you can either get for free and then make money from the coupons or use the coupons to pay for the subscriptions.

I did take a look at their gift guide though. I thought a few of the items were worth mentioning on my blog.

First Bobby Flay is the like the guy of Food Network. He seems to be a part of all of the reality shows and just has what it takes to do it all.

Bobby Flay’s Mesa Grill Cookbook: Explosive Flavors from the Southwestern Kitchen bobbyflayfeatures recipes for the signature cuisine he developed at his first restaurant, along with drool-inducing photos. Flay preps the reader for culinary adventure with a tequila guide followed by four different margarita recipes, and then sets off on a whirlwind tour of flavorful dishes inspired by the American Southwest. Blurt Board Game Review/Donation and Giveaway

Blurt by Educational Insights, Incorporated: Product ImageI was offered Blurt from Educational Insights to review and giveaway on Mom Start. I said yes but said that I would do the best review I can without opening the box because I want to donate it. I really want to make Christmas a happy time for others and my kids are too young to play this exciting game. One other reason I’m giving this game to charity is because it is for 3 or more players and well I may be a family of four but compressively we’re still only a family of two.

Blurt is a board game based on vocabulary, coming up with words. The object of the game is to make you way around the board before your opponents. One player will reads the definition of a word and it is up to you to be the first to guess the word. The game also has different skill levels. There are two sides to each card with one side being easier and more appropriate for younger kids.

For example, the definition might be "A Flat Moving Part That Sticks Out From The Body Of A Fish", then hopefully you can come up with the answer. When you do you blurt it out.

“Fin”

Then you would advance on the board. Simple but very mind boggling and for people like me nerve wracking. I have a love hate relationship for games like this. Especially when it’s played in a large adult party setting. Blurt would be perfect for that.

Klutz sent me a few more books for donation to the Toy Drive I am doing. I’m very thankful for being able to provide all these children with different toys. This book is the Paper Fashions Fancy craft book. In this book you can create the paper doll fashions of your heart’s desire. There are cut out patterns and plenty of pre-made designs that you can cut out and use; but there are also instructions on how to create your own. You are provided with trim, fabric and glue. Then when you are finished you can hang all of your designs on the set of hangers that is provided.

What I mean by that is that my kids teach me how easy it is to teach them. Play time is learning time and you can see lots of examples from eebee’s adventures. I will admit that I have the hardest time including my daughter in meal time. I just hate the mess and cleaning up. My husband has to help me relax and realize that teacher her and having her help clean up is more important than me and my clean kitchen. It’s ok if it gets dirty I can always clean it up. Seeing her smile in the end because she is so proud of what she has done makes it all worth it mess and all.
