My husband came home with rum balls the other night and he said they didn’t taste like rum so I figured I could make some rum balls. Well we’re out of rum so I thought I would take his favorite alcohol instead and make something with it. BRANDY!
So using Brandy I made these magical Monster Brandy Truffles:
I found that it was a very messy recipe.
By using my hands after melting the chocolate on the stove and letting it cool I broke it up into pieces and rolled most of it into balls.
Then we covered the balls with melted semi-sweet chocolate with brandy mixed in and they came out delicious.
Monster Brandy Truffles Recipe
16 Ounces unsweetened baking chocolate
4 ounces brandy
2 Tablespoons heavy whipping cream
12 ounces semi-sweet chocolate chips
2 ounces brandy
1 tube green icing gel
24 red hots
Melt 16 ounces unsweetened baking chocolate constantly stirring to not burn the chocolate, slowly add the heavy whipping cream
Add the brandy when you feel the chocolate is almost completely melted and remove from heat
Let sit out for about 30 minutes as it cools to room temperature. Then create the balls and place them in a re-sealable bowl. Then cool them in the temperature for 2 hours.
Melt the semi-sweet chocolate in the microwave 30 seconds at a time stirring in between each melting
Add the brandy in ounce at a time to help stir the chocolate
Then spoon the balls into the ganache and place on a wax paper. Let them cool and set up, then place the chocolate in the fridge to completely harden.
