Bourbon-Coffee Barbecue Sauce Recipe

The current issue of Women’s Health Magazine, on newsstands now, has some awesome recipes for DIY condiments so you can “Get saucy at home”. Get a little preview of what’s inside with this mouthwatering BBQ sauce featuring coffee and bourbon:

Bourbon-Coffee Barbecue Sauce

Java’s bitterness contrasts nicely with the sweetness of the molasses and bourbon, making for a complex, smoky sauce that tastes like it took hours to make. TRY IT WITH: ribs, chicken wings, grilled tofu or pineapple
Ingredients
  • 1 can crushed
  • tomatoes (28 oz)
  • ⅓ cup apple cider
  • vinegar
  • ⅓ cup molasses
  • ¼ cup bourbon
  • ¼ cup brewed coffee
  • ¼ tsp salt
Instructions
  1. Add all ingredients to a stockpot, cover, and bring to a boil. Uncover and reduce to a simmer for 30 minutes, or until sauce has thickened and reduced by about a third. Keep sauce covered in the refrigerator for up to one week. Makes 3 cups.

Chicken Soup for the Soul BBQ Sauce

Did you know that Chicken Soup for the Soul has their own line of foods? Talk about “Soul” food! Just in time for summer, Chicken Soup for the Soul has teamed up with Chef John Doherty to share some great ideas for using their BBQ sauce. Chef John has an impressive resume, cooking for presidents and royalty in addition to managing the Waldorf-Astoria in NYC. He works with the Chicken Soup for the Soul developing recipes and products, so here are his hints for utilizing their BBQ sauce this summer:

Summer BBQ Ideas:

  • Use Chicken Soup for the Soul barbecue sauce on pizza dough instead of tomato-based pizza sauce for a smoky-sweet note
  • Toss steamed fresh vegetables and canned beans with any Chicken Soup for the Soul barbecue sauce for a delicious vegetable-bean salad
  • Dress up your baked potato with Chicken Soup for the Soul barbecue sauce and melted cheddar cheese for a savory meal
  • Spice up your bacon by brushing a little Chicken Soup for the Soul barbecue sauce on strips of cooked bacon and bake in the oven for 2 minutes for an explosion of flavor
  • Mix 2 tbsp of Chicken Soup for the Soul barbecue sauce to ½ cup sour cream to make a zesty dip for your raw veggies
  • Toss the ketchup for bigger flavor! Add Chicken Soup for the Soul barbecue sauce to your favorite sandwich, burger or wrap

Memorial Day is right around the corner, and households across the US will be turning on their grills to cook up delicious cuts for the long holiday weekend! To help inspire you, Sparkling ICE has a yummy BBQ sauce recipe to try out:

Succulent BBQ Sauce
Author: Sparkling ICE
Recipe type: Sauce
Prep time:  10 mins
Cook time:  30 mins
Total time:  40 mins
 
Ingredients
  • 1 bottle Raspberry Lemonade Sparkling ICE
  • 1 white onion, chopped
  • 4 cloves garlic, minced
  • 2 fresh jalapeños, minced
  • 3 tablespoons olive oil
  • ½ cup ketchup
  • 4 tablespoons Dijon mustard
  • One 6 oz. can of tomato paste
  • ¼ cup balsamic vinegar
  • 2 tablespoons Liquid Smoke
  • 3 tablespoons scotch, whiskey, or bourbon (optional)
Instructions
  1. Heat olive oil in a medium saucepan and add the onion, garlic, and jalapeño. Lightly sauté on a low flame for 5 minutes.
  2. Add the tomato paste, ketchup, and mustard to the pan and cook for 2-3 minutes stirring continuously.
  3. Pour 1 bottle Raspberry Lemonade Sparkling ICE to the saucepan and stir until all ingredients are combined.
  4. Add balsamic vinegar and liquid smoke. Simmer for 25 minutes.
  5. Before you strain the sauce, mix in 3 tablespoons of your favorite scotch, whiskey, or bourbon (optional).
  6. Push sauce through a fine mesh strainer.
  7. Yield: 2 cups

A New Year’s Eve BBQ Slider or Quesadilla Recipe

In our family we love Barbeque and we love Quesadilla’s. I’ve recently found that it’s quite easy to make your own barbeque sauce and you can use Holland House Malt Vinegar in the recipe.

You can make the barbeque sauce using these ingredients. This recipe only makes two cups of the bbq sauce, you may want to double it if you are like me. Then you can use this on your leftovers, pork, ham or even turkey. It creates a great appetizer, meal or small bite!

BBQ Sauce Recipe

  • 2 tbsps vegetable oil
  • 1/2 cup onions (chopped)
  • 2 tbsps minced garlic
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1 cup ketchup
  • 1/2 cup Holland House malt vinegar
  • 1/4 cup soy sauce
  • 1/4 cup dark brown sugar (packed)
  • 2 tbsps worcestershire sauce
  • 1/4 tsp liquid smoke

     

    Directions

     

    1. Heat oil in saucepan and add onion, garlic, cumin and cayenne. Saute for 5 minutes over medium heat.

    2. Stir in remaining ingredients and simmer, stirring, until slightly thickened, 10 minutes. Makes 2 cups.

Now you can either make quesadillas as a great snack or you can make mini sliders using tasty potato bread rolls. We bought a huge bag of potato bread rolls from Coscto. So we enjoyed some sliders. I didn’t get any photos of the sliders though. I do however have photos of the quesadillas.

It’s a great way to have some small bites full of flavor.

Product Update: Byron’s Fully Cooked Pork BBQ

From Summer:

I heard back from representation of Byron’s BBQ and they said, “Please tell Summer thank you and also I appreciate the feedback on some of the ingredients….good to know.” If HFCS or corn syrup are a concern of yours then keep on the lookout for Byron’s BBQ and any possible changes they may make to their ingredients. Since they’re actually listening and following, I’d like to add that I’d love to see them at Costco (in addition to their BJ’s and Sam’s Club) since that’s the wholesale warehouse I belong to exclusively.

Byron’s Fully Cooked Pork BBQ Review & Layered BBQ Salad Recipe

My MOMS Club of Woodinville (MCW) recently had our End of Year Party. This is our biggest and best party of the year, and mostly highly attended. This year our party was catered by “For the Love of Food” a new company by one of our members. She homemade most of our magnificent dishes, but also on the menu clip_image002was Byron’s Fully Cooked Pork BBQ.

 

We had a tray that boasts feeding 30 sandwiches and was 4lbs of meat. We maybe got 30 sliders out of it. They recommend ¼ cup of meat as a serving with 33 servings in the tray … we MCW women must like our meat since our tray didn’t stretch that far. You can enjoy Byron’s Pork in sandwiches as we did or get some new ideas on the Byron’s recipe site.

Try something new for dinner tonight!

clip_image005Layered BBQ Salad Recipe
Serves 8

3 cups Byron’s Fully Cooked Pork BBQ, warmed according to package directions
1 can baked beans
2 cups colorful coleslaw
1 bag (10 ounces) frozen whole kernel corn, thawed
2 cups green bell pepper, diced
Pickled okra for garnish

Heat baked beans on the stove on medium heat until warm (about 5 minutes), stirring occasionally. Layer bottom of a serving dish with the heated baked beans, followed by an even layer of corn kernels and then a layer of green bell peppers. Place an even layer of BBQ on top of the bell peppers, followed by the coleslaw. Place pickled okra on top for garnish.


I found Byron’s to be fully tasty and, unlike other pulled pork I’ve had, Byron’s is not fatty and fully meaty. I can pronounce all the ingredients which I love about a product, but I don’t like that one of them is High Fructose Corn Syrup which is in the ketchup in their sauce. There is also corn syrup in the Worcestershire sauce concentrate.

Byron’s is available at local stores as well as at Sam’s Club and BJ’s though products are not available at all locations so you’ll have to check your local store.
