Before kicking up my feet to ring in the New Year, I’m sharing my very last recipe of 2015! This easy recipe whips up in a flash – perfect after a long holiday season of cooking and baking! – and was a big hit around my house:
Sweet Corn Cake
7.4 oz bag CHI-CHI’S™ Fiesta Sweet Corn Cake Mix
1/4 C margarine
1/4 C water
14.75oz can cream-style corn
Add the Sweet Corn Cake mix to a large mixing bowl. Add water and corn. Melt the margarine in a small microwave-safe bowl, then pour into the large bowl with other ingredients. Stir with a large spoon until mixed, then pour into an ungreased 9 x 5 loaf pan and bake at 350 degrees for 40 minutes or until done. Use an ice cream scoop to serve corn cake in bowls.
