My husband offered to make dinner the other night and he was going to make some French Toast. I was thinking of what to put on them and side dishes, suddenly I thought about the bananas in the pantry that were getting really brown very quickly so I said we should have bananas as a side. Then he said, what about putting them in the French toast creating banana flavored French Toast. He doesn’t do any cooking without a recipe, he’s really scientific and precise like that, so he started hunting down a recipe. I decided to look on-line. At Food Network we found French Toast with Bananas and Walnuts. Well, I didn’t want to go to the grocery store and didn’t have any walnut trees in the backyard, meaning, the pecans in the pantry had to do. So this is what we came up with and how we made our own recipe.
We used hot dog buns
And my son’s reaction was, “dad, you forgot the hot dog inside”
The filling is made of bananas, pecans, and nutmeg.
Stuffed Banana Pecan French Toast Buns Recipe
1/4 cup milk
4 very ripe bananas
1/4 cup pecans
1/8 teaspoon nutmeg
8 slices bread
4 tablespoons butter
In a large shallow bowl beat the eggs until frothy. Stir in the milk and set aside
Peel the bananas and mash in a small bowl stir in the pecans and nutmeg
Spread the banana mixture in between the hotdog buns, press the bun together gently
Place the filled buns in the egg mixture let soak and then flip coating all sides for a few seconds
Cook on the griddle or frying pan over medium heat. Make sure to cook all sides. By cooking all sides you won’t have any raw egg and it seals in the mixture.
Use remaining banana mixture for dip or drizzle.
