I love preparing food ahead of time whenever I possibly can. Recently, I’ve been setting my breadmaker to prepare a loaf overnight, so that I have a fresh, warm loaf of bread quite literally when I get out of bed. I can then prep sandwiches for Jai’s brown bag lunch while I eat a warm slice of bread and butter for breakfast!
We’ve been eating a lot of sandwiches lately just out of convenience, and it doesn’t get much simpler than a good old fashioned tuna sandwich. Because tuna can get old fast, I try to add new things to keep it interesting whenever I make a batch. Here’s a variation that I made for today’s lunch:
- 12 oz solid white albacore tuna
- 1 TBSP hemp hearts
- 1 TBSP NAKANO Original Seasoned Rice Vinegar
- 1 TBSP honey mustard
- 1 TSP crushed red pepper
- ¼ C finely chopped red onion
- ¼ C whipped salad dressing
- Combine all ingredients in a medium bowl and stir; serve on bread or lettuce wraps.
When I say this is spicy, I mean it! The first bite is hot, followed by a sweet tanginess. If you want to tone down the heat, you could easily use 1/2 or ever 1/4 teaspoon – feel free to adjust it to your own tastes!
