I love eating ham and we can’t ever finish a whole one so when we have leftover ham it’s time to get creative. Sometimes we have sandwiches and sometimes we have eggs and Hormel gave me even more ideas after the holidays. I found this recipes and wanted to share it with you because it looks so yummy, but you know that I would leave out all of the onions.
Scalloped Potatoes and Ham Recipe
1 (20-ounce) bag refrigerated sliced potatoes
2 cups Hormel® Cure 81® Sliced Ham, diced
1 yellow onion, thinly sliced
1 (2-ounce) jar diced pimiento, drained
1 (8-ounce) package garden vegetable cream cheese
1 (12-ounce) can evaporated skim milk
2 tablespoons all-purpose flour
1/2 teaspoon ground nutmeg
1/4 cup Hormel® Real Bacon Pieces
1/2 cup crushed cornflakes
Sliced green onions
In 4-quart slow cooker, combine potatoes, ham, yellow onion and pimiento.
Meanwhile, in microwave-safe bowl, combine cream cheese, evaporated milk, flour and nutmeg. Microwave on HIGH (100%) 1 to 1 1/2 minutes or until smooth and slightly thickened.
Pour cheese mixture over potatoes and ham. Cover; cook on LOW setting 5 to 6 hours or until potatoes are tender. Stir in bacon pieces and sprinkle with cornflakes and green onions before serving.
