Sausage Ratatouille Recipe (Low Carb)
You Will Need:
– 2 lbs Italian turkey sausage links
– 4 1/2 tablespoons olive oil, divided
– 1 eggplant, peeled and diced*
– 2 small zucchini, halved and sliced
– 1 onion, diced
– 1 green bell pepper, diced
– 2 cloves garlic, minced
– 14 1.2 oz can diced tomatoes, drained
– 1 tablespoon PLUS 1 teaspoon tomato paste
– 2 Tablespoons Italian seasoning
Bring a medium pot of water to a boil. Boil sausage until no longer pink in middle, about 15 minutes. Transfer sausage to a plate; cool and then slice.
Heat 3 tablespoons oil in a large deep skillet over medium-high heat. Add eggplant and zucchini; saute, stirring often, until lightly browned, about 7 minutes. Transfer to plate.
In same skillet over medium heat, warm 1 1/2 tablespoons oil. Add onion and bell pepper; saute 3 minutes. Stir in garlic and sausage; saute 3 more minutes. Stir in tomatoes, tomato paste, eggplant, zucchini, and Italian seasoning. Partially cover and simmer for 10 minutes.
* My family isn’t really a fan of eggplant, so I subbed in sliced mushrooms instead.
I made this for dinner, served it on top of spaghetti squash (while some of my family opted for whole wheat pasta instead), and was still able to enjoy some of it for lunch the next day. It was DELICIOUS!
