
Salmon Crusted with Curry World Peas and a Beet Salad

Ingredients
- ½ cup crushed Curry World Peas
- 2 thick salmon fillets
- 1 tablespoon olive oil
- 2 medium beets, sliced
- 2 tablespoons orange juice
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Preheat oven to 400. Drizzle salmon fillets with oil and then coat with crushed peas, pressing lightly to adhere. Place fillets on a lightly oiled baking sheet and roast for 10 minutes.
- Combine orange juice, vinegar, salt and pepper. Toss with beets. Serve alongside crusted salmon.
Yummy! We only eat fish here in our family and this recipe looks tasty!
I know fish is really good for you, but we barely eat it at our house. I really should begin to incorporate a bit more into our diet- especially since that photo looks so yummy.
Seafood is the one thing I cannot eat, but it always looks so pretty!
