Skillet meals are a godsend for those with not enough hours in the day. Healthy and delicious skillet meals are to be treasured.
Seven Spoons is a small but tasty collection of meals ready in 15 minutes or less. Each meal serves two – they come in massive bags, with the dish soap in the photo above to give you a sense of scale – and contains at least one serving of vegetables, is gluten-free, and is less than 475 calories.
The flavors span the globe, with quinoa vegetable biryani, chicken biryani, Thai green curry, and Moroccan chicken tagine meals. I was intrigued – and in a hurry. I picked up all 4 during a Target run – they’re available at Target and Whole Foods – and drove home after work.
I opened the chicken biryani package to find: a pouch of rice (microwaved for 3 minutes), two packages of mystery spices (which turned out to be yogurt seasoning), and a pile of chicken, cashew, and mystery squares. The final pile I threw into my skillet.
Initially I thought the squares were McNugget-like chicken pieces; I gradually realized that these were the frozen biryani spice blend. I will admit to staring at the package, mystified as to what the unlabeled contents were, for at least 3 minutes.
However, once I sorted out what was what, preparing the meal was easy-peasy: heat the chicken and spices in the skillet 10ish minutes; microwave the rice 3 minutes, then add to the chicken and spice blend; mix up yogurt with raita spices for a side.

I threw in leftover pieces of rotisserie chicken to fill out the meal. You could also add: tofu; peeled hardboiled eggs; vegetables to taste, but especially potatoes, peas, or cauliflower.
After 10 minutes of cooking, I had a meal:
Yes, but how did it taste?
The verdict: good! It was full of spices and aromatic without being overwhelmingly spicy – a busy mom could easily feed this to a child without them grumbling too much about spices. All in all, this is an easy, healthy weeknight meal that can easily be added to or expanded to suit your needs or dietary preferences. Happy culinary adventuring!
