This morning I woke up and loved the way the air outside felt. It was cool, and crisp… perfect soup making weather. My parents had been talking about this soup they had made… so I decided to make my own version. I love soup… and this Tortellini Vegetable Soup is perfect on a cool day with a flakey piece of bread.
Quick and Easy Tortellini Vegetable Soup Recipe
Ingredients:
· Olive oil
· ½ onion, diced
· 1 T crushed garlic
· 2 small zucchini, quartered and sliced
· 1 can white kidney beans (cannellini beans)
· 1 can diced tomatoes
· 56 oz. chicken broth
· 2 T parsley
· 1 tsp.. Basil
· 1 tsp. Oregano
· 1 package cheese tortellini
· 1 10 oz. bag fresh spinach (stems removed)
Directions:
Heat a drizzle of olive oil in a large soup pot over medium high heat.
Sautee onions and garlic until onions begin to become translucent.
Add zucchini pieces.
Continue sautéing over medium high heat for 5 minutes or so.
Add the beans.
Sautee for 3 minutes.
Add the chicken broth and tomatoes.
Add in all spices.
Bring soup to a boil and add tortellini.
Cook pasta to package directions.
Mix spinach into the soup until it has wilted.
Serve soup and garnish with parmesan cheese.
