Here is my Pork Tacos on White Corn Tortillas Recipe
Using the Al Pastor Pork
Ingredients:
1 package frozen corn
1 14 ounce can of black beans (drained and rinsed)
1 package of Al Pastor Pork
1 garlic clove minced
1 Tablespoon Cumin
1 teaspoon salt
1 teaspoon chili powder
1 cup rice
2 cups water
1 tablespoon butter
1 Tablespoon extra virgin olive oil
5 White Corn Tortillas
garnish:
Cheese
Sour cream
green chili peppers
Directions:
heat the olive oil and minced garlic oil in a skillet over medium heat
Cut the pork into 1 inch pieces then add the pork to the hot oil and cook for about 8 minutes making sure it’s flipped halfway in between cooking both sides
bring rice and water with the cumin, salt, chili powder and cumin and butter to a boil then cover and simmer on low for 20 minutes
Add the beans and corn to the meat mixture
Now preparing the corn tortillas is up to you. I baked mine in the oven which is how they kept the shape you can see in the photo. However, for this meal I think they would be better fried in olive oil on the stove top and then placing the rice on top and then adding the meat mixture and then adding some cheese and sour cream.
