My daughter’s birthday was January 3rd and we made a cake and for her slumber birthday party I made cupcakes. And I was pressed for time because it was a Friday night and I do work. We are are double income family, even though I am self employed I do work full time. SO I have no Shame in using box mixes to make excellent desserts that kids go crazy for. Saving time doesn’t discount taste and flavor, and that is the point of this post and recipe that I’m sharing with you. Look, you can have beauty and tantalizing recipes with ease.
Pillsbury Celebrations Make birthdays, holidays, every dessert deserving moment easier. For this celebration I used this recipe along with some special suckers for decoration. The suckers I found at Party City. I picked all matching suckers and purchased one for my son that was different from everyone else. For some reason I didn’t purchase an extra one so when I dropped one of them, the special one ended up being the one for the birthday girl.
Red Velvet Birthday Cupcakes with Special Suckers Recipe
- 1 x Pillsbury chocolate cake mix
- 1 cup water
- 1/2 cup sour cream
- 1/4 cup vegetable oil
- 3 eggs
- 2 tablespoons unsweetened baking cocoa
- 1 bottle (1 oz) red food color
For the frosting
Funfetti® Bold Purple Vanilla Frosting
Special suckers from Party city
1Heat oven to 350°F (325°F for dark or nonstick pans). Grease and flour or spray with baking spray with flour or use mini cupcake liners a mini cupcake pan.
In large bowl, beat cake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour batter into cupcake liners.
2Bake 31 to 36 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling rack. Cool completely.
3Meanwhile, in 2-quart saucepan, cook flour and milk over medium heat, stirring constantly, until mixture is very thick. Cover surface with plastic wrap; cool to room temperature.
4In large bowl, beat sugar and butter with electric mixer on high speed until light and fluffy. Gradually add flour mixture by tablespoonfuls, beating until smooth. Beat in vanilla.
Putting the icing in a frosting bag helps with adding a decorative point.
