Living with a chronic illness, it can be hard navigating food allergies and sensitivities to find what will make your cranky body function best. Many with thyroid disorders – like me – have had success with Paleo eating. When I saw this beautifully designed book by Rosa Rigby of clean, Paleo eating, I was eager to give it a look.
In brief – Paleo aims to have us eat the way our distant ancestors did: no processed food, lots of protein and veggies, minimal sugars, grains, and dairy.
With the chill of April showers, it’s a perfect time to cook rich, nutritious soups. A great start to your soups is using a nutrient-dense bone broth, as excerpted below.
Bone Broth – makes 2 cups
1 pig’s foot
1 pork bone (ask your butcher for both)
1 carrot
2 celery stalks
1 onion, cut in half
a few springs of fresh sage, rosemary, and thyme
1 tablespoon black peppercorns
1 garlic clove
Bring all ingredients to a boil. Simmer on low, 1-2 hours. Skim off foam.
Cool in fridge overnight.
Strain and reheat. Freeze or store in fridge up to 3 days before use as a soup base, or drink on its own when you’re feeling sick.
