I recently went on a trip to Orville Ohio where I met with Smuckers, a family oriented company that taught me lot of new recipes to try this holiday season. One of them that I actually cooked in their test kitchen was this Peanut Chicken Mini Phyllo Cups Recipe. I had a lot of fun cooking in their kitchen and will be making this recipe for my family. And this photo is my actual photo. My partner and I made these and plated them for this photo. Nummy right?
Peanut Chicken Mini Phyllo Cups
Makes: 45 Cups
Preparation Time: 10 Minutes
Cooking Time: 15 Minutes
Ingredients
1 tbsp. Crisco® Pure Olive Oil
1 lb. ground chicken
1/4 cup diced red bell pepper
2 tbsps chopped green onion
1/4 cup Jif® Creamy Peanut Butter
1/4 cup water
2 tbsps soy sauce
1 tsp. minced garlic (we put in two cloves)
1 tsp. finely grated gingerroot
1/8 tsp. pepper
2 tbsps fresh lime juice
3 (15-count) pkgs. frozen pre-baked mini phyllo shells, thawed
2 tbsps chopped fresh cilantro
Directions
1. HEAT oil in large skillet over medium heat. Add chicken; cook until crumbly and no longer pink. Add red pepper and onion. Cook 1 minute.
2. COMBINE peanut butter, water, soy sauce, garlic, ginger and pepper in small saucepan. Cook over low heat, stirring until smooth. Stir in lime juice.
3. POUR sauce over cooked chicken, stirring until thoroughly combined. Fill each phyllo shell with 1 tablespoon chicken mixture. Garnish with cilantro.
