Blue Bunny Ice cream has some wonderful recipes and ideas on how to spruce up ice cream and use it as a festive party pleaser on their website. And I used Blue Bunny for two different parties this year.
For the first party, I took out all of the Christmas Cookie Ice Cream Sandwiches and set out to make the Frozen Cookie Baklava. Yeah, I didn’t think about the details of making the recipe until the night of and was afraid to use lime juice in place of lemon juice, so I made it really simple instead. I cut up all the ice cream sandwiches into little triangles, and drizzled caramel all over the top. It was bite size ice cream made fancy for the party! And yea, I had a lot going on that night and didn’t get any photos. Christmas was quite quick this year, It’s the first year we were involved in church, the neighborhood, and pre-school. WOW, it’s been a blast, but I don’t know where all the time went either. Anyways, here is the recipe that inspired my ice cream creation!
Blue Bunny® Frozen Cookie Baklava
INGREDIENTS:
8 Blue Bunny®
Christmas Cookie Ice Cream Sandwiches
3/4 cup finely chopped walnuts
1/2 cup honey
1 tbsp. butter, melted
2 tsp. water
1 tsp. lemon juice
1 tsp. ground cinnamon
PREPARATION: In a small bowl, stir together the walnuts, honey, butter, water, lemon juice and cinnamon. Line a 9 x 5-inch loaf pan with parchment paper or non-stick heavy foil. Place 4 ice cream sandwiches in prepared pan, cutting to fit. Spread 1/2 the walnut mixture over the top; cover with remaining ice cream sandwiches, cutting to fit. Spread remaining walnut mixture over the top; freeze at least 6 hours or until solid. Cut into 12 triangles. Serve immediately.
Makes 12 servings
Prep Time: 12 minutes*
*Freeze time extra
The second party, I actually wasn’t even able to attend. So nothing special was created. I was able to pass off the Blue Bunny ice cream to a friend and she passed it around to all of our friends to try. I missed out because I love Blue Bunny. Locally, we don’t have Blue Bunny or any of their ice cream varieties. I miss Blue Bunny Ice Cream. I was really looking forward to trying the Hot Cocoa ice cream bars. Maybe next year I can do this again or go to a state that carries all of these wonderful Blue Bunny Holiday flavors and Blue Bunny Holiday Recipes.
This will be my final grand attempt at creating an ice cream treat for this year. I hope this goes well, and I’m going to have some better planning on my part.

Those look yummy!
We ♥ Blue Bunny Ice Cream – we live really close to their home base (about 1 1/2 drive) and have visited their ice cream museum a couple of times – last time we took our Girl Scout troop and the girls had a blast!
Ooog yum! I love ice cream. 🙂
love spumoni ice cream and that treat would so special for a christmas dessert I will have to remember this for next year
i love the spumoni ornaments, my son would love to help(decorate) make them with me
I love Spumoni the most!!! Most Italian restaurants serve it year round, but not Iowa groceries. Because of some strange appetites the stores refuse to stock this delicacy, but for thanksgiving to January. This is weird to say the least. So I had to make my own to serve quests. It can be done and it came out well, but it took time that I would rather have paid Blue Bunny . But now that I can do it & well Food suppliers better watch out!
