Many of my friends have new lifestyles – Paleo, Primal, Gluten Free, GFCF. With all of this I’ve been compelled to learn to cook with different flours and meals. A week ago I failed at an muffin experiment and was too tired to give it another go; so a week later I have a different recipe for you, but I think you’ll love it. This recipe is Gluten Free and contains no sugar (instead there’s agave); so these are great for satisfying your New Year’s health resolution AND your sweet tooth! Also, if you’re missing the smells of the holiday season, then cinnamon and clove in this recipe will have your house full of great smells in no time (though I do recommend ScentSationals too).
Mother Nature’s Natural Fruit and Nut Muffins – A Gluten Free Recipe
1 cup Mama’s Coconut Blend flour
1 cup Almond meal
½ cup butter
½ cup agave
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon ground cloves
1 Tablespoon ground cinnamon
½ teaspoon salt
2 cups apples, peeled and cored and cut in the bite size bits
½ cup raisins
1. Preheat oven to 350oF. Line muffin tip cups with paper liners.
2. In Kitchen Aid Stand Mixer combine all ingredients EXCEPT apples and raisins. Mix well on speed 2 for about 2 minutes. Stop and add apples and raisins and combine on stir setting until evenly distributed. (Be sure to break up any clumps of fruit before setting in the mix.)
3. Pour evenly into 18 cups. Muffins won’t raise much so fill generously. Cook for 22 minutes, toothpick will come out clean. Cool 5 minutes before removing from cups.
