I love Mexican food, growing up in Texas it was common to eat it at least once a week. So when I was asked to help Goya and IMUSA celebrate Hispanic Heritage Month I was quite happy to do so. Did you know that Hispanic Heritage month is From September 15 – October 15? I didn’t know that. Now to help you celebrate we are working with IMUSA, the leaders in Hispanic cookware, and Goya Foods, the largest Hispanic-owned food company in the United States. We have a recipe to share with you to get you in the mood to get in the kitchen and we have a giveaway for you as well.
Mexican Chicken Soup Recipe
Ingredients:
3 Garlic Cloves chopped or smashed
2 Tablespoons Goya Olive Oil
1 Red Pepper diced
4 Chicken Breasts
1 Can Goya Chickpeas
1 can Goya Black Beans
3 cups Chicken Broth
1 can Goya Tomato Sauce
1 Tablespoon Lemon Juice
2 Teaspoons salt
2 Tablespoons Cumin
3/4 cup Goya Quinoa
Optional:
half a jalapeno pepper chopped and deseeded
OPTIONAL TOPPINGS
Avocado
Cheese
Cilantro
Sour Cream
Directions:
Cut the chicken into 1 inch cubes
Season with half of the cumin and salt
Heat up the olive oil in the IMUSA Nonstick Caldero
Rinse the beans
Brown the garlic and red pepper
Brown the edges of the chicken
Add the tomato sauce, lemon juice and chicken broth
Season the beans with rest of salt and cumin
Then add the beans to the pot
Bring to a boil add the quinoa
Cook for at least 30 minutes (I cooked for three hours so the seasoning really flavored all the food)
Then top with your favorite toppings.
