In (Dis)honor of the new Netflix original show, Lemony Snicket’s A Series of Unfortunate Events, I wanted to share this most fortunate recipe for Lemony Snicket’s own Lemon Squares, which are guaranteed to cause minimum suffering and maximum gastrointestinal delight.
Lemony Snicket’s Lemon Squares
Recipe originally appeared in the vintage 1963 tome “Betty Crocker’s Cooky Book”, developed by Ellen Weseloh.
1 C flour
1/2 tsp. baking powder
1/2 C butter
1/4 C confectioners’ sugar
1 C granulated sugar
2 TBSP. lemon juice
A pinch of despair (optional)
Mix together flour, confectioner’s sugar and butter. Press the mixture evenly into an 8X8x2 pan (Or split it between two 9×5 loaf pans, if you have an unfortunately ill-stocked kitchen such as my own). Bake at 350 degrees for 20 minutes, then remove from the oven.
While the crust is baking, mix together the remaining ingredients to create the filling. Once the crust is out of the oven, pour the filling onto the crust, then put back into the oven for another 20 minutes or until done, keeping a close eye on it. Overbaking this dessert will cause much weeping and wailing! Allow to cool thoroughly, then cut into squares. Makes enough servings to get you through a long Netflix binge, and is the perfect dish to accompany anguish.
