1 package (12 oz.) House Organic Tofu EXTRA
FIRM or House Premium Tofu EXTRA FIRM
1 cup Cheddar and Monterey Jack cheese,
shredded and combined
4 x 8-inch flour tortillas
Slice Tofu into 12 equal slices.
Place 6 slices of Tofu evenly onto 1 tortilla. Sprinkle over with half the cheese and top with another tortilla. Repeat with the other two tortillas.
In a large non-stick skillet, cook the quesadilla over medium heat until the cheese melts and the tortilla is lightly browned, about 3 or 4 minutes. Carefully flip over the quesadilla to crisp and brown the other side.
Cut each quesadilla into quarters and serve.
