Hormel Potato Skins Recipe
8 small baking potatoes
1 cup shredded Cheddar cheese
½ cup HORMEL® Real Bacon Bits
½ cup thinly sliced green onions
Heat oven to 425°F. Cut potatoes in half lengthwise. Place 8 halves on microwave-safe plate; microwave 10 to 12 minutes or until tender. Repeat with remaining potato halves. Let stand until potatoes are cool enough to handle. Scoop out potato flesh to within ¼ inch of peel; reserve potato flesh for another use. Place potato shells on baking sheet. Top shells evenly with cheese and bacon pieces. Bake 15 minutes or until cheese is melted and potato is lightly browned. Fill each potato with sour cream; sprinkle with green onion.
