California Toast by eMeals – A DELICIOUS Healthy Breakfast
I’ve been a serious meal planner for awhile now, at least when it comes to dinner. Recently though, I decided to give eMeals Breakfast Plan a try… and I love it! It makes my mornings SO much easier and I am loving the new options that are keeping our morning fresh and breakfast healthy. When I saw this recipe for California Toast Recipe pop up in my meal plan, I knew it was going to be amazing healthy breakfast.
California Toast Recipe
-1 ripe avocado, peeled & pitted
– 4 thick slices sourdough bread, toasted
– 1 t olive oil
– 4 eggs
– Salt & pepper to taste
– 1 c alfalfa or bean sprouts
– 1 c fresh salsa
Scoop avocado flesh into a bowl & mash with a fork. (I like to add a little squirt of fresh lemon juice.) Spread evenly over 4 slices of toast. Heat oil in a large nonstick skillet over medium heat. Crack eggs into skillet, and cook 2 minutes. Cover and continue cooking 1-3 minutes, until white is set. Place 1 egg on each piece of toast. Sprinkle with salt & pepper, and top with sprouts (optional… I left off because I didn’t have any). Serve with salsa.
