Halloween Eyeball Pasta Recipe

The minute I saw Pasta Lensi Black Bean Sedani, I knew it would be perfect for a Halloween dinner! We tend to think of sugar overload when we think of Halloween, but there’s actually a lot of great savory dishes that you can enjoy. I decided to create a spooky Halloween pasta dish with the Black Bean Sedani covered in “Blood” with radish eyeballs! This cute little pasta monster is a great way to get into the spirit of the season and encourage your little ghouls to eat a real meal before trick-or-treating – and pssst! It’s loaded with black beans and radishes, but you don’t have to tell the kids that!

Halloween Pasta With “Blood” Sauce & Radish Eyeballs

Ingredients:

1 box Pasta Lensi Black Bean Sedani
1 jar garlic pasta sauce (to ward off vampires, natch!)
2 radishes
2 green pimento-stuffed olives

Directions:

First, you’ll want to create your radish eyeballs! I don’t remember where I first saw this idea, but I’ve been making these for Halloween for well over a decade. To make them, pick up a bunch of radishes and look for the most “Photogenic” ones – bright red, unblemished, and eyeball-shaped!

Wash two radishes and cut the ends off. The idea here is that you peel the skin off the radishes to reveal the white “Eyeball” underneath, leaving a few carefully placed stripes of red skin to create bloodshot eyes. You can do this using a potato peeler or sharp knife – this year, I used a little knife from a pumpkin carving kit, and it worked great.

Once you’ve carved your “Blood vessels”, use the potato peeler or knife end to carefully carve a hole at the top for the green olive “Pupil” to sit in. Slowly carve the hole larger until the olive fits nicely. And the eyes have it!

Next, you’ll want to cook the pasta according to the directions on the box. This is the perfect Halloween pasta, because when it cooks, it makes the stockpot look like a cauldron. Double, double, toil and trouble…

Once the pasta is done, strain and place onto a large serving plate. Carefully spoon the garlic pasta sauce over the noodles so that it resembles dripping blood. Place the eyeballs on top as garnish, and abracadabra! Your spooky Halloween monster has been created and is ready to serve, family-style! It’s a regular creepy pasta!
