I can’t believe that I’ve been on Medifast for one full month already! I am feeling so good, enjoying my meals, and excited about what the rest of this year will have in store for me. Each day, I eat four Medifast meals, one healthy snack, and two “Lean and Green” meals consisting of vegetables, lean protein, and healthy fats. I wanted to share a Lean and Green recipe that I created this month for a delicious chicken salad – aside from being a Medifast-friendly recipe, it’s just plain delicious and would be appropriate to take along to potlucks or serve to guests at dinner. I used a Caprese salad as my inspiration for this, using the “Healthy fat” serving of olive oil as the dressing. I hope you enjoy it as much as my family has!
Lean & Green Chicken Salad
Ingredients:
2 Don Lee Farms Chicken Patties
1 C fresh spinach leaves
1/2 C chopped white mushrooms
1/2 C chopped red tomato
1 tsp. Extra Virgin Olive Oil
Black pepper (to taste)Directions:
In a large bowl, combine spinach, mushrooms and tomato.
Microwave the chicken patties according to the directions on the box. Once heated, dice into small squares and weigh out on a food scale until you have 6 ounces worth of meat. Add to the bowl with the other ingredients.
Drizzle olive oil over the salad and sprinkle with black pepper. Toss until the salad is thoroughly coated. Enjoy!
Tip: 2 patties are just over 6 ounces, so you will have a little meat left over. What I do is make another, smaller salad for my fiancé Jai and use the extra meat for that, since he loves this salad! You could also refrigerate the extra for later in the day if you prefer.

There’s nothing like a simple salad, especially in the summer time. I’m not big on heavy dressings so this sound perfect.
