Easy Chicken Caprese Recipe (Low Carb) – Thanks to EMeals

It’s been a LONG TIME since I’ve really been able to make a meal plan, go shopping, and then cook meals for my family all week. Moving just messes all sense of order and routine up. HOWEVER, we are finally starting to get settled in, my kitchen is pretty much set, and I was able to go back to my good buddies at EMeals to help me get back on the meal planning bandwagon. If you haven’t ever heard of EMeals, you should check out my first post on MomStart about them.
Now… onto the good stuff… This Chicken Caprese Recipe was EXTREMELY easy and very fast. In the midst of a serious heat wave, heating up the kitchen was NOT what I wanted to do, even if I am lucky enough to have AC. This recipe was mostly just putting stuff in the oven… then enjoying the delicious goodness that came out. Perfect for a hot day!
Easy Low Carb Chicken Caprese Recipe
Ingredients:
· 8-12 strips bacon, partially cooked but not crispy
· 1.5-2.25 lbs boneless, skinless chicken breast
· 1 T olive oil
· Salt & pepper to taste
· 3 Roma tomatoes, sliced
· 6 fresh basil leaves, thinly sliced
· 4-6 slices mozzarella cheese (I just used shredded)
Directions:
Preheat oven to 400°.
Place chicken in a 9×13” baking dish; brush with oil.
Sprinkle with salt & pepper.
Top with tomatoes &basil.
Wrap each breast in 2 bacon strips.Bake, uncovered, 20-25 min or until cooked.
Top with cheese; bake 1 min longer or until cheese melts.
This recipe was SUPER fast and easy. It came from the “Low Carb Meal Plan” and is part of an equally delicious week long plan. Here I just shared the entrée with you, but not to worry, EMeals gives you a complete menu for every dinner. I LOVED this recipe and will definitely be adding it into my regular rotation. That’s one of the great things about EMeals – Yes, they give you a week’s worth of menus, but it’s SO easy to sub one out if you have a favorite that sounds especially good that week! =)
