It’s a new year, which means that many of us are shrugging off the indulgences of the holidays and refocusing on what we’re putting into our bodies. For my part, I’ve been stocking my cupboards with fresh ingredients this month so that I can easily whip up healthy dishes. So I was interested to try a carton of eggs from Blue Sky Family Farms, a line that is available both locally and nationwide at stores such as Natural Grocers and Whole Foods. Blue Sky Family Farms eggs are 100% free range, pasture raised, and certified humane with non-GMO and organic varieties, making them a great choice for me to keep on track with my 2016 resolutions!
For my first taste of Blue Sky Family Farms eggs, I decided to whip up a quick casserole.
This egg casserole is quick and easy to make, packed with delicious fresh vegetables and only 87 calories per serving; it’s also Nutrisystem-friendly and vegetarian.
Low Calorie Egg Casserole

1/2 C finely chopped broccoli crowns
3 sweet mini peppers, chopped
2 TBSP finely chopped white onion
1 small tomato, diced
1 white mushroom, sliced
1 C fat free milk
5 Blue Sky Organic Free Range Eggs
1/2 tsp. baking powder
Black pepper (to taste)
PAM cooking spray
Preheat oven to 325 degrees.
Layer all vegetables in a 9×5″ casserole dish sprayed with PAM; set aside.
In a large bowl, combine eggs, milk, baking powder, and black pepper. Whisk thoroughly, then pour over vegetables. Bake 45-60 minutes or until fully cooked.
You can eat this casserole right away, or cover the dish and keep in the fridge. It tastes great on its own or served with a little salsa!
