Strawberry Fruit Leather
  • 1 ½ lbs ripe organic strawberries
  • ¾ cups sugar
  1. Puree the berries with the sugar in a blender until smooth. Push through a fine mesh strainer. Pour into a saucepan and heat to boiling, then reduce the heat and simmer for about 45 minutes, or until thick.
  2. Preheat the oven to 200° F. Pour the berry mixture into a Silpat-mat-lined baking sheet and spread it out in an even layer. Dry in the oven until it is tacky and sticks, 2-3 hours. Allow to cook for at least 3 hours before eating. Once well cooled, it may be cut and placed on parchment paper and then plastic wrap. They won’t last forever, they may get a bit sticky over time, but that’s what happens when you don’t use any preservatives!
  3. Other fruits to try: Plums, nectarines, peaches, berries; Apples and pears turn a funny color, but try it if you want, with a little lemon juice to preserve the color.
