Athenian Panini with Grilled Chicken
  • 1 Cup Baby spinach
  • 6 Oz. Sliced Grilled Chicken Breast
  • ¾ Cup crumbled feta cheese
  • 1 Medium size red onion peeled, sliced
  • ¼ Cup olive spread or Greek style olive tapenade
  • 2 Round Pita bread slices
  1. Preheat Panini press at 350⁰F for about 6-7 minutes
  2. Meanwhile, start placing all the ingredients onto one of the pita bread slices. Start with the grilled chicken, sautéed red onions, olive spread, baby spinach and feta cheese.
  3. Place the other pita slice on top of it and place onto the Panini press for about 5-6 minutes.
