During the summer my family loves to eat all kinds of fruit that’s in season. Me on the other hand, I don’t like fruit with tiny seeds in it so I stick to the veggies. Summer is one of the best times of year to enjoy veggies—from grabbing fresh ears of corn at your favorite road-side stand to visiting the farmer’s market on a Saturday morning for crisp cucumbers and crunchy carrots. Not to mention the many great veggie moments that happen in the summer—snapping green beans on the back porch or firing up the grill to char up peppers, mushrooms and more! My daughter’s favorite veggies are carrots and cucumbers. She loves to eat them raw.
I love to cut bell peppers in half and grill them where they sit like a bowl so all of the juices of the peppers stay in the pepper. I also love to have zucchini and mushrooms on the grill. My son and I are crazy about mushrooms. He even begs to have mushrooms on his pizzas. When you’re grilling the veggies it’s good to cover them in oil or Country Crock. Just melt it in the microwave and then lightly brush on the butter and then salt or pepper them and grill them until they are done. Then you have fresh yummy veggies.
