Again, I was challenged by Johnsonville to come up with a recipe with specific ingredients. Now this time, I went an easy direction combining two different things I like. Here’s the challenge:

· With the holidays just around the corner, we challenge you to create a holiday party worthy dish using Johnsonville meatballs, Ocean Spray Cranberry Sauce and Heinz Chili Sauce. You can create your dish in a slower cooker or over the stove for a quick appetizer for unexpected company.
This is what I created, it’s Cocktail Fried Eggs & Johnsonville Cranberry Sauce Meatballs.
Cocktail Fried Eggs & Johnsonville Cranberry Sauce Meatballs
Ingredients (for one serving):
Two Eggs
Four Meatballs
1 Tablespoon olive oil
1 tsp salt
1 tsp pepper
2 Tablespoons Cocktail Sauce
Directions:
Prepare the meatballs ahead of time. In a slow cooker combine a 2 cans of cranberry sauce and 20 Johnsonville meatballs on low heat for 4 hours.
Heat a skillet up over medium heat with oil in it
Crack two eggs making sure the yolks don’t break over the heat
Add all the seasonings on top of the eggs including cocktail sauce
Then gently flip the egg without breaking the yolk
Serve
This sounds really good! Especially for brunch!
