Bacon desserts have become quite popular – a sentence I never thought I would be typing. Although it seems so wrong on paper, for many tastebuds, this extreme combination of sweet and salty is so right. Since February is National Hot Breakfast Month, I created a unique dish perfect for “Breakfast Night”: These Chocolate Bacon Muffins combine a breakfast muffin with the dinnertime protein of a meat and a sweet chocolate frosting for “Dessert” – a full day’s meal in one bite, if you will.
Although I’m decidedly on the fence about sweet and salty flavors together, this combination was done in a subtle enough way that, among my taste testers, both the diehard candied bacon fans and the average dessert eater enjoyed it. It got a lot of compliments all around, so I think this would be a good “Bacon dessert” to start with if you want to appeal to a range of tastes!
Chocolate Bacon Muffins
1 box Krusteaz Chocolate Chunk Muffin Mix
1/3 C vegetable oil
1/4 C cooked, crumbled bacon plus additional bacon to taste for topping
1/2 C water
1 tub of chocolate frosting
To make crumbled bacon: Coat a frying pan with cooking spray and cook thinly sliced bacon until extremely well done – bacon should easily crumble into very small pieces with a knife. Roughly 3 slices of crisp bacon should provide 1/4 cup worth. Reserve extra bacon for topping – this is totally dependent on your own tastes, so cook as much as you feel appropriate to cover the muffins!
For muffins: In a large bowl, combine muffin mix, water, eggs, bacon and oil, stirring with a wooden spoon until mixed. Spoon into muffin cups or ramekins lightly coated in cooking spray. (I was out of muffin liners, so when I created this recipe, I cooked about 4 muffins in ramekins and poured the rest into a loaf pan to make a chocolate bacon muffin cake, which worked well. This mix typically makes about 12 standard size muffins.)
Heat oven to 350 degrees and cook for 22 minutes or until done. Allow to cool, then top with chocolate frosting and remaining bacon for topping. Eat and enjoy!
