According to a recent article, one of Hollywood’s A-list stars is craving orange juice during her pregnancy – which is great because 100% orange juice is more nutrient dense than many commonly consumed 100% juices. And, just one 8 oz. glass of 100% OJ is a good source of folate (11% Daily Value), which is important during pregnancy for the baby’s development. And we love avocados for their OMEGA fat so try this chilled orange avocado soup recipe. This recipe is from The Florida Department of Citrus and reprinted with permission. Chilled Orange Avocado Soup
1 ripe avocado
1 (13.5 ounce) can unsweetened coconut milk
1 cup 100% Florida orange juice
½ cup plain Greek yogurt
1 tablespoon grated fresh ginger
Juice of half a lime
Salt and pepper to taste
Chopped cilantro for garnish
Place avocado, coconut milk, orange juice, yogurt, ginger, lime juice, salt, and pepper into a food processor or blender and process until very smooth and creamy.
If mixture is too thick, add a bit more orange juice or water. Serve garnished with cilantro and red onion.
