Cherry salsa makes a sweet and spicy condiment for salmon, chicken or pork. For a milder salsa, remove all of the ribs and seeds from the jalapeño, or leave it out altogether. For an extra special touch, use a dark cherry balsamic vinegar
Cherry Salsa With Balsamic Vinegar & Basil Recipe
Makes about 1-1/2 cups
2 cups sweet cherries, pitted and roughly chopped
1 jalapeño, stemmed, seeded and finely chopped
1/2 red onion, finely chopped
1/4 cup basil leaves, chopped
2 tablespoons balsamic vinegar
1/4 teaspoon fine sea salt
1/4 teaspoon ground black pepper
Juice of ½ lime
Toss all ingredients together in a large bowl. Cover and chill for at least 1 hour before serving.
