Just in time for holiday gift giving, Santé Nuts have come up with this unique cashew and bacon brittle recipe:
Cardamom Cashew and Bacon Brittle

2 C. granulated sugar
2 T. water
1 C. crispy thick-cut bacon, cooked and chopped
1 5-oz. bag Santé Cardamom Cashews
In a medium sized heavy saucepan, combine sugar and water. Set on high heat and allow to boil and bubble, using a wet pastry brush to wet down the sides if needed.
Once the sugar turns a dark amber color, remove from heat and mix in half of bacon and the Cardamom Cashews. Spray non-stick spray on a heavy baking sheet and carefully pour hot sugar mixture in pan.
Gently place the other half of the bacon and cashews on caramel on top.
Allow to cool for at least an hour or two.
Use your hands or the back of a large spoon to break brittle and serve.
