I’m not sure how often we think about where our food comes from, or even further than the farm. How is our food created. It’s a scientific process that includes sunshine, water, food, and pollination. Food doesn’t just come out of thin air. I’m working with Whole Foods Market and wanted to share with you a recipes where bees are needed. And remind you of the importance of bees. Here is my recipe it’s an amazing Zucchini muffin recipe. These muffins can’t be put down with just one bite you’ll want another and another.
Zucchini Muffins Recipe
Ingredients:

3 cups whole wheat flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder
-
3 teaspoons ground cinnamon

3 eggs
-
1 cup applesauce
-
2 cups white sugar
-
1 Tablespoon vanilla extract
-
2 cups grated zucchini
-
1 cup dark chocolate chips
Directions:
- Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
- Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
- Beat eggs, applesauce, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and chocolate chips until well combined. Pour batter into prepared pans.
- Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Unfortunately, with U.S. honey bee colonies declining at an average annual rate of nearly 30%, it’s time to get serious about saving our bees!
